A sort of Saison, fermented with Botrytis-infected Viognier and Pinot Gris grapes. This beer is brewed with Pils malt, organic Hard Red Winter Wheat malt, Warrior hops, Willamette hops, Liberty hops, Saison yeast and Botrytis wine must.

Light and airy on the nose with a slight citrus aroma. A kind of plum/citrus flavor with a dry wine like finish. Appearance is clear. Overall a nice, crisp beer.

Very nice beer. Gets to you quick. Very clear. I are this with some goat cheese scrambled eggs, went pretty well IMO.

Poured a clear amber color with a thin white head. Taste fruity and dry like a white wine with malty yeast aftertaste, really good and drinkable. Has a fruity and tart taste with a nice dry finish.

Bottle pours a clear golden/orange with a medium white head. Aroma of dry cracker malt and saison yeast. Taste is pretty simple and one dimensional, saison yeast and some crisp wine grape (must). I was expecting more, this was rather simple and boring.

Pours a translucent yellow color with a white head. Fruit, white wine, tart, light malt and yeast aroma. Tart, white wine, apple, citrus, pear, yeast and light malt flavor. Light body and average carbonation. Sweet and slightly tart taste and a tart fruity finish.

Visuellement, on a en tête un champagne lorsqu’on regarde cette bière : jaune paille limpide, des bulles à profusion et un mince col mousseux qui est tout de même persistant. Un bouquet complexe et alléchant de moût de raisin, de levure sauvage et de céréales sucrées nous laisse croire que ce sera grandiose en bouche et croyez-moi, c’est le cas. D’une grande complexité, la Noble Rot est caractérisée par son aspect vineux et son acidité rafraîchissante. Le côté sucré des céréales et du raisin s’étale dans une finale sèche et biscuitée. Les houblons utilisés sont aromatiques et complémentent à merveille le profil légèrement sauvage de cette bière. Une grande réussite de Dogfish Head.

Okay, so I avoid Dogfish Head’s off centered brews like they are poison. Beer brewed with whatever weird thing they can get away with. So I had this poured at a tasting of 4 "off centered beers". Its was champagne colored with a small white head. Little co2. Aroma was a little sour and winey. The aroma was sweet, the taste was dry. The main flavor was light, tart and winey. With the words ROT and INFECTED on the bottle I imagine many avoid this, do yourself a favor, try it. Out of the four this is the one I bought.

750mL bottle. Poured clear, quite light straw golden with a fizzy, short-lived white head. The aroma picked up dank red grapes and wheat, accented by kaffir lime, salt, and pineapple.. hard to get a grasp on, but it was very interesting. The flavor found quite a bit of salt, lime, and wheaty tanginess throughout.. champagne-like effervescence and flavor at times.. finished dry, carrying through lots of wheat, lime, salt, and carbonation. Medium-bodied with fairly high carbonation on the palate.. crisp and refreshing at most times, but there were some residual sugars that bogged it down a bit.. enjoyable overall, but I didn’t love it.

Shared bomber. Clear yellow and fizzy cap. Aroma of stuffy attic, straw, grape. Taste is sweet-forward followed by tartness. Clean, dry finish.

Bottle. Pours to a glowing golden body with a tall but rapidly dissipating starch white head. Some nice visible carbonation makes it look champagne like. The aroma is lots of pilsner malt and dry white wine. More pinot gris than viognier. Definitely wine. Some subtle yeast. The flavor is malty up front but morphs into a strong white grape on the finish. But it is like a beer wine. The palate has a heft like a beer.
