A sort of Saison, fermented with Botrytis-infected Viognier and Pinot Gris grapes. This beer is brewed with Pils malt, organic Hard Red Winter Wheat malt, Warrior hops, Willamette hops, Liberty hops, Saison yeast and Botrytis wine must.

The palate is where this beers excels! In addition the appearance is exceptional. Bright clear champagne color and taste. If I blind folded you and asked you to tell me if this is a wine or a beer it would be a tough call. Overall a very good brew! ---Rated via Beer Buddy for iPhone

22iz bottle into tulip. Hilton head. Appearance: pale yellow, transparent, with bubbly white head. Looks similar to apple juice. Aroma: dry biscuity yeasty nose. A little fruity. Small bit of alcohol. Taste: dry in flavor. Shorter finish. Texture: light body, very dry mouthfeel, champagne like, but without the effervescence. Low carbonation. Overall: An interesting and creative drink. Not at all what I expected. It’s not all that winelike.

Noble Rot - Reviewed 21FEB12 Bottled: early 2012 Pours a surprisingly light yellow ale with just a drifter of a white soapy foam top. Smells of grain and saison yeast and really, nothing else. Flavor falls into the berliner-weisse area for me - a slight tart and quite dry ale with little semblance to an average beer. Thin and moderately carbed, the beer is actually drier than I would anticipate. With a beer brewed with so much must, the liquid is palatable, and even appreciable on some level. The botrytis is lost in this format however, as the sweetness, mouth watering and earthy character in botrytized dessert wines is much different than is presented here. Although decent, I would argue that it is maladvertised for the ingredients. This is simply a saison style beer with a shit ton of grapes. (4/3/3/2/3) Serving type: bottle 03-07-2012

Clear golden apple juice color with virtually no head. Aroma is a bit wine-y, some buttery, banana notes. I couldn’t imagine the flavor before I tasted it, but now, I know it pretty much tastes like a Viognier crossed with a wheat beer; plenty of Viognier presence, atop low tones of wheat, buttered bread crust. It’s got a somewhat oily texture with pretty low carbonation.

Pours a red tinted golden color. Notes of apples, wine, honey, chocolate hops, booze, and fruit. Sweet finish.

Very clear like a white wine, dry like wine, musty, bread-scent and fruity like a wine. A good beer to drink if you are not 100% into wine. The yeast gives off a dough-ish taste. There is a slight grape scent. The beer has a good carbonation to the body. Barely a lace left on the glass. Overall enjoyable, easy to drink, flavorful with grape, bread, yeast, slight tangy and tartness.

Bottle, bright golden color, with a bubbly white head, with a yeasty, doughy, fruity, white grape must nose, with some white wine tannin, faint honeyed wheat, pale, pilsner malt, spicy notes, with a spicy saison yeast, faint peachy, candied lemon peel, citrus accent in the aroma follows through on a good mild fruity apple cider, hoeyed pale, pilsener, wheat malt, yeasty, musty white grape, white wine tannin character with a faint acidic lemon, grapefruit rind, young sour pineapple fruity skin woody flavour, leading towards a warming, white grape mustiness, white wine dryness finish.

Interesting. Tastes more like white wine to me than beer. Not one of Dogfish Head’s best, but not terrible.

12 oz. draft at Plan B in Glastonbury, CT. Pour is light golden, mostly clear with just a touch of haze. Head is effervescent and short lived, almost no lacing. Smell is saison- like. Yeasty, some banana, white grapes, touch of clove. Taste is nice, like a saison but more wine characteristics like a hybrid. Bubbly texture to compliment the style. All if the aroma qualities come forward in the flavor as we'll. Not bad. ---Rated via Beer Buddy for iPhone
