Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

12oz bottle served in a Duvel tulip. Poured a deep brown with some hints of red. About a finger of brown head. Plenty of wood in the aroma along with chocolate and some fruitiness. Wood jumps right out at you. Very peppery. Full bodied without being syrupy. Chocolate malt flavor that lingers long in the finish. A bit of alcohol, but that’s not surprising for a 12% beer. There are some hops in there, but only enough to balance out the malt. This was way to peppery for me to enjoy. I seem to have some real enhanced perception of peppery flavors, because the same thing keeps me from enjoying some Grenaches.

One of my favorite beers. From the exotic description to the unusual smell and the thought provoking taste, all three really makes this beer one for the ages. With a wholly unidentifiable flavoring (which has to be the holy wood) I can say I have never had a beer before nor after that has caught my attention as much as this. Nothing I can describe can account for the craziness of this beer, just try it!

Absolutely stunning, one of the best surprises I have had in the last six months. On tap it was dark black with a small beige head. Aromas of wood, coffee, and chocolate. The taste is creamy smooth and gorgeous. Sexy chocolate malts and perfect balance.

Poured Black/Brown. And according to my computer desk from Ikea, black/brown is in fact a color. The head was just a tiny little sheet of dark tan foam sitting on top. Drinking it made my face hot and my schlong hard. God damn this is a phenomenal beer! It could do very well with some time in the cellar, there is substantial hotness from alcohol, but the other flavors intermingle so well together it would be hard to imagine it better.

Oh my. Dogfish head has gone and done it again. When they do malty, they really do malty. What a scrumptious caramel candy of a brew. Hops is there to balance, but this is all about the sweetness. Definitely a special occasion favorite from here on out.

Wicked caustic. Smell is spread in a 3-foot are, pitch black with minimal translucency, taste and smell of burnt smoked wood and meat. Bitter coffee and bitter chocolate. Really fun.

Dark brown pour with khaki head. Aroma of roasted malt, coffee, chocolate, fruit. Taste the same, however some smoke definitely comes into play. Lingering hop finish at the tail end. Definitely would revisit this strong ale, damn drinkable beer for 12%!

bottle. terrific beer! shared with brother and both agreed it was very unique and incredibly smooth for it’s ABV. a nice roasted malt with stout-like characteristics. beautiful
