Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Iíve had this a few times and had mixed experiences. Pours dark. Aroma is fruity, vanilla, wood. Taste is coffee, cocoa, wood, booze, tobacco. I dig.

Bottle to glass. Pours a deep brown color with a light brown head. Aroma is syrupy, dark fruits, roasted malts. Thick, chewy, boozy, dark fruits. Tasty.

Strong hint of cocoa on the nose. Nice lacing, fades to a thin, cream colored head. Appearance is a bit darker than expected for a brown ale - much closer resemblance to a porter. Long, smooth finish with dark fruit notes and hints of coffee and cocoa. As always, a great beer from Dogfish.

I wanted to age this one, but I just couldnít wait. This one is only about 5 months old. Smells like dark fruit, raisin, coffee, cocoa, some booze and of course, wood. Dark brown with barely any head. What foam the beer does have is tan. Tastes a little sour, with black coffee, cocoa, wood and brown sugar. Hardly any booze in the taste for 12% ABV. Excellent thick and syrupy palate. Very well done from DFH. Unique, bold, high octane but good tasting brew. If aged properly by a more patient person, this beer would probably lose that sour quality and be perfect. As is, itís still very good.

The beer pours a deep, dark brown color with a small khaki-colored head that disappears quickly. The aroma contains caramel malts, wood, vanilla, toffee notes; the taste is quite umami, slightly sweet, slightly boozy, and a touch bitter, and the flavors were reminiscent of wood, tobacco, vanilla, and bourbon. Despite the high ABV, this beer was smooth, and itís full body, oily and thick texture, and flat carbonation matched the flavors perfectly.

Bottle from Saveur-Biere.com - Color: deep dark black beer with no carbonation and small brown head. Smell: caramel and malt domination. Spicy notes, finish as vanilla. Taste: very high body, sweet and caramel. Woody notes and spicy. Small alcohol finish. Aftertaste: dry malt and caramel with alcohol notes.

Tulip glass; pours deep brown with a tan head. Lacing present on the glass throughout the drink. Aroma of vanilla bean, coffee, chocolate, toffee, and booze. Taste is loads of vanilla, woody malt and more booze. This beer is very good, but I feel like at somewhere between 8-10% instead it couldíve been great.

Nose -- you can really smell the wood, caramel, nuttiness and alcohol. Just a tiny hint of smokiness. Poured super dark and super thick. Didnít think it would be like this. The alcohol is really upfront with the woodiness, caramel, sweet malt and a bit of bitter. Finish is alcohol. Really great and I will pick up more.

Decent beer, but strong, so strong it makes me want do crazy stuff like listen to old ABBA records and dance naked in the kitchen. I think Iíll have another please.

Single bottle to tulip. Dark brown pour with a thin, slightly pinkish head. Vanilla, caramel, bourbon, and wood, and booze in the aroma. Flavor matches - the wood notes are a little much, but the sweetness knocks the woodiness back a little bit when it warms up a bit. Bitter coffee finish and aftertaste. Very creamy/full-bodied mouthfeel.
