Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Draft at BGH. This beer should only allowed go be poured in the DFH goblets. The aromas are charred wood, burnt cocoa and scotch. The flavor has some grape and extremely bitter chocolate. Really complex but could use a year.

Bottle. Pours very thick, dark brown, with very little head. I didn’t expect this to look like a stout. Aroma is sweet and alcoholic like brandy, full of dried fruit. Also present are caramel, cocoa, and a hint of banana. Wow. This one is overwhelming in my mouth. Thick and chewy mouthfeel, warming and alcoholic, and sweet all around. Touches of bitter espresso, chocolate, brandy, and oaky/wooden/earthy notes. I’m really enjoying this beer. It’s rich, heavy, sweet, alcoholic, and different.

Smells of sweetness and wood come out during the pour. Its dark brown with a tan head. It tastes sweet. Very tasty , but it is a beer that I would not drink one after another. It is definately a beer to drink slowly and savor.

very nice woody aroma, dark brown, little head, nice flavor woody kinda almost faint raspberry overall nice beer little to much alcohol taste.

Dark brown with a tan head. Aroma is hard to place, malt with some wood is the best I can describe it. Taste is a little sweet for me, strong malt presence. Some hops underneath and a somewhat oak-like aftertaste. Definitely interesting, but not something I’d drink often.

Did not like this beer the first time I had it. Tried to be more open to a truly unknown taste and aroma. Very strong nose and taste that has medicinal/Home Depot association.But somehow I am getting to like it. The people at Dogfish Head are very brave and creative. Oak is subtle. Palo Santo is a sledgehammer.

Well, leave it to DFH to keep me so intrigued by their brews, and this was no different. It says it’s a brown ale, but it looked and smelled more like a stout, and then it’s labeled as a strong ale. Imagine how confused my palate was?! anywho, the flavor was quite complex, and my mother(who I was surprised even wanted to try this) said it best that it tasted like chocolaty root beer, which was strangely appealing. So yeah this beer was awesome!! Cheers!

There is a tree in the bottle. Forget the sap / resin of hops, there is tree sap mixed in this 12% brew. Amazing malt, but crazy presence from the wood. A weird astringency...just a weird beverage all around. 12% was the right way to go as this wood would make some great bourbon. There is some tobacco and tasty malt, but this is all about the wood.
