COMMERCIAL DESCRIPTION
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Le nez est digne d’une grosse brown ale bien rôti avec des notes de cuir et de dattes. En bouche c’est riche et onctueux presque lacté. La finale de bois humide donne du tonus au chocolat, café et fruits trop mûrs déjà bien en place.

Bottle. Pours a viscous deep brown, almost black, with a bit of brown head. Sweet caramel aroma, with a bit of coffee. The flavor is very complex - a lot of alcohol, fruit (cherries?), bright wood notes, and rich malts. Not an easy drinker, but a nice beer to sip on over a couple hours. Gets better as it goes along. Still, I remember it being better on draft.

Viscous, deep dark drown to purple appearance as it poured out of the bottle. There is an aroma of alcohol soaked wood chips. It’s thick and creamy on the tongue. Burly malts striking a balance between sweet and bitter. It tastes how it looks.

Looks like molasses. Dark brown-purple color. Nose is raisins. Straight-up malts with hints of dates, prunes. High abv not too noticeable.

Pours a very dark brown with a dark beige two and half finger head. The smell of wood, light roasted malt, and subtle dark fruitiness are present. Fig and plum with a bit of wood on the nose transitioning to toasty malt and boozy slightly sweet syrup with a hint of vanilla. The finish is dry with malt and warm booze. Exceptional mouthfeel, gentle but abundant carbonation which blankets the inside of the mouth, very full-bodied. Really an extremely original and very enjoyable brew.

Pours pitch black color with light head. Aroma of lots of ash, berries, especially bilberry, raspberry, liquorice and syrup notes. Flavor of sweet syrup, berries, spices and liquorice, sufficient amounts of vanilla also present. Slick and oily palate with a spicey and bitter finish. Quite interesting and exiting brew. Excellent.

From notes. First reviewed 11/26/2011. Poured from a 12 oz. bottle into a DFH signature glass. While it was pouring out of the bottle I could tell that this was going to be a thick and viscous beer. The color is a mahogany or ebony, nearly black with almost no light getting through. A dark tan cap rests on top of the beer and retains very nicely for a beer of this ABV. The aroma is full and deep, but it is not overly complex of out of. The roasted malt gives off caramel, burnt brown sugar, roasted grains, cocoa, and a bit of alcohol. The flavor starts with a combination of caramel and burnt brown sugar, twisting the sweetness in a different direction. Toasted grains and cocoa come through next. A bit of vanilla precedes the nice dry woody flavor toward the end. A little bit different than oak, this must be the influence of the Palo Santo wood. Just a bit of booze peaks through toward the end. The finish is lightly sweet and a little woody at the same time. There is no doubt about the fullness of this body. Slightly sticky, with a bit of oily residue after each sip; both of these sensations are quite common for big ABV beers, so no lost points there. The carbonation is creamy and contributes to the smoothness, although it is a bit understated. I thought this was another good take on the American Brown style from Dogfish Head. Indian Brown is a better beer, in my opinion, but there are not a lot of 12% brown ales out there. It’s definitely a compliment that Sam can brew a big, tasty beer in a category that normally sees more mild releases.

Pours a solid black, no head to be found. Alcohol is very present in the smell, along with a warming wood aroma. Taste starts off sweet with the carbonation, and fades with a spicy and licorice flavor. Alcohol is felt in the mouthfeel, a little burn. Would be tough to drink this more than very occasionally, but for the style it's good.

Impenetrable black colour with tinges of deep russet brown. Nothing much by the way of head, some mocha coloured largish bubbling. The first aromas (it’s straight out of the fridge and needs a few minutes to warm in my hand of course) are of herbal licorice, molasses, rosewood and spice. It smells of dessert, ripe figs, coffee and all sorts of lush good things. Full bodied and woody. More spice comes out upon tasting in this big, remarkable beer. Beers like this make the market wonderful and it is a delight to be able to taste it.
