Flavor is lead by alcohol with wood, barley, dark fruit. Candy sugar and vanilla. There is a lot happening here. Feel is smooth and medium bodied. Creamy. Big alcohol flavor and warming effects. A big and delicious beer. muzzlehatch (4427), Burlington, Vermont, USA Nov 2, 2008 Updated: Nov 18, 20088x12 oz bottles consumed over the course of the month of October, most from a Duvel glass at near room temperature.....the tight-bubbled light caramel head recedes moderately quickly atop a deep chocolate, thick, opaque body, typically leaving very little in the way of lace, though it tends to congeal thickly when swirled enough....the aroma is....just absolute nirvana: the most intense marzipan, inflected by toasted almonds, coconut, deep cocoabutter; hints of port and rosewater, as I dig deeper and oh my have I dug deeper into this one, is this as worthy of digging into as anything, magisterial, tremendous....I remember being so worried, the first time I cracked one of these open, and experienced this divine perfume, wondering if the quality could possibly carry through on the palate, and was overjoyed -- and astonished -- to find that it did, a darker and more bitter, even caustic if drunk too quickly espresso-Scotch burn that lasts as long as I can bear it, continuing and deepening as more sips are taken, sips turning into gulps as I cannot drink slowly, cannot forbear to quaff it as if it were the blood of angels....and like an angel, its kiss is soft, delicate, yet unforgettable.
I don’t feel like quibbling here. Though I could never be satisfied with just one kind of beer, one flavor profile, one style ... Palo Santo Marron does everything it can do in its own particular style and profile, perfectly. Pours a dark black color with quickly dissapating tan head. Aroma very caramely, roasted malts, molases, raisins, and some rummy alcohol. Flavor has lots of warming alcohol presence, but its balanced by the sweet plum raisin flavors and roasty finish. Pours a very dark brown body with a fizzy chocolate brown head that faded to a thin ring. Great nose of chocolate, coffee, nutty grain, and a light hint of woodiness. Some light alcohol. Lots of wood on the flavor, backed up with heavy sweet maltiness. Notes of coffee, vanilla, alcohol, and an almost bourbon like finish. Reminds me of sandalwood. Mouthfeel is full bodied and fairly thick but not cloying really. Moderate fizzy carbonation. Really coats the mouth well. DFH’s best new beer in a very long time. Slipstream (734), USA Oct 28, 2008 Updated: Jun 18, 2009Another nicely colored label from Dogfish Head. Stoutly pour - dark with very little head. Penetrating aroma of cherries and grapes plus alcohol - almost like brandy or whiskey, plus flowery scents and a little baby powder. The flavor is potent and arresting - a fruity, dark brew with strong woody, incense-like notes - I guess that is the palo santo. Pleasant bitterness on the palate followed by alcohol warmth. A really interesting brew with an interesting story behind it, but it is a little too potent for everyday consumption. PSM is a very fine, creative concoction from Dogfish Head.
