The flavour is packed full of many different tastes that combine for a great beer hence I rate it well. Nice once in a while treat. Whoa! - what a surprise, black, viscid-looking stuff with a smallish foamy-fizzy light brown head - even with a small profile, it still left a trace of lacing. The aroma reminds me of cedar, crushed mint, and mahogany chips, with the deep roast malt pushed way into the background; and oddly, I think there’s a hint of green olive saltiness. The taste - oh, that’s yummy - halfway between an oily/nutty brown ale and an imperial stout - coffee ground acidity, oak-resin, table cream, herbal and quite strong alcohol - I love it. Surprisingly only average-at-best bodied, but solid carbonation and acidity, a long oily, malty, boozy finish to it - I got the wood-aging more in the finish, but I suspect the palo santo wood character is what makes this so mellow, for a 12% heavily roasted beer. I am always excited to get another rating from DFH, which I consider one of the best breweries in the, or the world. Oak and malt aroma. Flavor has sugar, sweet vanilla, and lots of that. Earthy, some dirt, and a little peat. It doesn’t fit into any style very well, but shoehorning it into American strong makes sense. The high abv is well hidden. Odd, sugary nose of slightly-medicinal alcohol with significant fresh lumber, some coffee/plant tucked in the back. Sweet flavor with slightly bitter coffee, alcohol, vanilla, wood. Palateis a little watery, yet enjoyable and somewhat unique. canary dog (441), Rutland, Vermont, USA Sep 13, 2008 Wow. This stuff is FINE. Rich and velvet liquid blankets your mouth. Immediate presence of cherry that results in a cough syrup-like presentation.....but very yummy and rich. Sweetness is well-balanced with complex tones of vanilla and roasted grains. Finish is ridiculously smooth for a 12 percenter. Yes, I think the base is definitely the Indian Brown Ale. An excellent experience; and at roughly $9 per 24 oz., a better deal than any wine around. The base is a nice brown ale...not sure if it is the Indian or not, but its awesome. Full of barley and roasted grains. The Palo wood rounds the whole thing out with a nice wood and vanilla combo that makes this one unique. Everything gets balanced out with a nice and strong malty backbone. Tastes of dark grains, chocolate. Also some hops or maybe that’s the alcohol? This is a really good beer. I bet the wood aging has played a role in complicating the flavor.
