Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

355mL bottle Bottled 04/24/14 Wow! Can’t get over how thick this stuff pours, like a pale sump oil-looking liquid making its journey into the glass. Aroma is rich, fortified wine-like, with plenty of raisins, dried fig, dark chocolate, burnt nuts, thick dark toffee, seared red meat character, charred oak, and an almost rancio-like aged character you tend to get with older beers. The stuff is properly thick, not just syrupy, not just oily, but chewable, with a low carbonation accentuating this. Big flavours on the palate with bucket loads of browned caramel, charred nutty wood, dried fruits, earthy leafy hop, cocoa - so much going on! Solid bitter note on finish, booze is warming, not shy but welcoming. Completely different from anything I’ve yet encountered - an old ale, meets an imperial stout, wood aged but not specifically oak, so it’s a whole new ball game. Fantastic stuff!

Definitely blurs the line between strong ale and stout. Coffee and Roma wine on the nose. Booze apparent on the palate running into a nice wine and plum with bitter dark chocolate. Delicious and definitely too easy to drink.

Pours black with a brown head. Chocolate, malt, caramel, toffee, wood, molasses and dark fruit aroma. Chocolate, wood, soy sauce, tobacco, dark fruit, malt, caramel and licorice flavors. Full body and average carbonation. Semi-dry chocolate, wood and dark fruit finish.

Faint nutty brown oaty vibe. Vibrant woody redcurrant nose. Initial taste of juicy bright malt, floral and oaky. Warming mouthfeel without being sticky or rich. Sweet burn on the finish.

This is one fine beer. Pours black with mocha head that leaves a ring around the glass. Aromas are campfire, meat, vanilla and then port. Chewy mouth feel. Vanilla and dried fruit, port, some booze. Great stuff.
