COMMERCIAL DESCRIPTION
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Malty all the way through, not too much depth which is a bit surprising. The rest of the flavor profile is good, but subtle, making it a bit of a one trick pony. - Drink & Give Thanks to The Lord

Beautiful beer. Smell and taste very complex dark fruit, wood, coffee, and bitter chocolate. High alcohol doesn’t overwhelm but is warming.

12oz bottle poured into a tulip glass, black...somewhat thin for the ABV, with a small light tan head. Nose is great! Very complex, can definitely pick up the wood.

Transfer from BA review on 9-12-12- Poured from bottle into snifter Appearance – Pours a nearly black color with a small one finger tan head. The head fades quite fast to leave a light level of lacing. Smell – The aroma is sweet and boozy. A strong dark fruit aroma of raisin, grape, and prune are big and bold matched only by a good wiff of alcohol. Mixed with these aromas are some lighter aromas of a woody nature as well as some smells of vanilla and some roasted malt and chocolate. Overall quite robust and delicious. Taste – The beer is not as sweet as would have been detected from the nose. While not as sweet as expected it is as boozy as would be expected from the nose. The taste begins with a lightly fruit sweetened taste with a big roasted malt and a dark bready taste. As the taste moves on, a woody and oaky flavor comes to the tongue with some lighter tastes of vanilla and a bourbon like alcohol taste. While the alcohol is lighter in the middle of the taste it gains strength as the flavors move on. In the end the alcohol is rather strong; leaving a warming and light oaky bourbon burn on the tongue. Mouthfeel – The beer is thick and creamy in body with a lower to medium level of carbonation. Its thick body suits well the very warming nature of the beer. Overall – Pretty boozy but it is nice and warming and has some wonderful flavors. This is definitely a sipping beer.

Could be the best smelling beer of all time. Great up front malt and fruit tastes. Love the lingering sweetness. This is a new favorite for me. Too bad I can’t get it all of the time.

Bottle sample at American Strong Ale tasting at Beer&Beyond, Tel Aviv. Dark black with low quickly diminishing brown head. Unique floral aroma, soapy, woody, smoked, very rich. Very sweet flavor, floral, soapy, woody, date honey, vanilla, chocolate, notes of coffee, balanced. Oily texture. Light carbonation. Full body. Sweet coffee aftertaste.

A very dark brown beer with a quite weak and beige head. The aroma is unique, complex and powerfull, great. Liquirice, dark fruits, aromatic wood, nuts and chocolate. Taste has rich and balanced malts, some caramell and liquirice, aromatic wood. Almost full bodied, easy to drink, nice. Alcohol cannot taste and it’s gives only the strenght and richness, great. Very unique beer, where the complex flavours mix to nice balance. Enjoyable. Complex. Good.

Extremely good. Great mix smoke with some roast and a nice dose of citrus hops. Dark chocolate and light booze. Medium bitter finish. Pours murky brown with decent head and lacing l. Tap at Rehoboth Beach brewpub.

Dogfish Head Santo Marron has a thin, cream-colored head, a extremely dark-brown (essentially black) appearance, with noticeable, fierce bubbles streams at the side of the glass. There is a lacing sheen left behind. Aroma is super-sweet, full, syrupy, and of alcohol. Taste is of dark-roasted, very sweet, syrupy barley malt, a background wood note, subdued hop bitterness, and even molasses, I think. Mouthfeel is rather heavy, with an underlying chalkiness (which I perceive as a flaw). Dogfish Head Santo Marron finishes mostly wet and very boozy. RJT
