Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Sampled at OTH. Incredible strong ale almost like a porter. Smokey and possibly hints of banana. Well balanced and sweet.

THOUGHTS: Had a small sample of this at a Michael Jackson’s tutored beer tasting during Philadelphia’s beer week, but there wasn’t enough to rate. I’ve been looking for it ever since, so I’m glad I finally found it. Hid alcohol incredibly well. TECHNICAL: Bottle. Poured a dark brown that was nearly opaque black in the glass with a small, light brown head that mostly diminished and left good lacing. The aroma was light to moderate, chocolate and strong coffee malt, candy and fruit. It was also woody as it warmed. The initial flavor was moderately sweet and lightly acidic; while the finish was heavily sweet, lightly acidic and moderately bitter with and average to long duration. There was chocolate malt, maybe some vanilla, some dark fruit, slight wood and some coffee. The full body was syrupy with tingly carbonation and a light alcoholic finish.

12oz. bottle. aroma has asligt bublegum scent on top of vanilla and wood.taste is full and heavy. a little more of the bitter than malty. great wood-sweet aftertaste. this is a special beer

Hugely impressive beer. To be perfectly honest, my expectations were not terribly high given DFH’s recent penchant for odd yet not terribly drinkable beers. This is an anomaly and one that should probably get added to DFH’s regular lineup. Stronger and more interesting than their Immort and definitely comparable to almost any imperial stout, this beer has nice wood overtones yet good balance hop scaffolding. Great barelywine alternative to those looking for a nightcap when it’s over 70 degrees.

In short: A very woody and roasted sipper with a personality of its own.
How: Bottle. Sample at Mondial de la Bière 2008
The look: Black body topped by small tan ring of foam
In long: Strong nose of alcohol, raisin pie and wood. Taste is wood/barrel upfront. Thankfully this is not yet another bourbon barrel character, this one has a pleasant old wooden chest feeling (if that makes any sense to you). Opening the drawers of my old wooden chest I found flavours of highly roasted nuts, fudge, raisins, grapes and molasses. Sweet but not overly so, the medium-high roastiness level helps to hide the sweetness and create a dryness sensation. I was surprisingly surprised by this one. 12% is as well hidden as a my good education after I have a six-pack of these.
