Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Originally tried this at GABF ’07 and loved it. Finally found a bottle to now rate. Pitch black with a decently firm tan top. The aroma is woodsy and gritty. It drinks with a definitive alcohol burn, full of interesting complex flavors, particularly dark ripe fruits, baking chocolate, molasses, maybe even some grape. Definitely a beer for brooding. pitch black with beige head, it has coffee aroma blended with caramel and chocolately nose. the flavor is vanilla with chocolate background, very caramelly finish.

Bottle. Poured black with a thin tan head. Sweet aroma of caramel and milk chocolate backed with light fruits (cherry?). The flavor had caramel, chocolate, and dark fruits, with a nice vanilla backing. Medium to full body and smooth carbonation. Very nice!

This is a great balance of intense but manageable features. Foresty wood flavors and aromas on viscous and creamy body that avoids sugary sweetness and excessive heft. No candy sugar headache material either. No flaws aside this an impressive vanilla, light cocoas, rum and cookies kind of good. The lack of fruit flavors is very welcome. The alcohol was hardly there. In fact, my first guess was about 6.8 which made me wonder if the official 12% is accurate? Delicious and impressive. Very unique.

Bottle at OT. I got a sip from Anders and I didn’t see it poured but as it was the same bottle as omhper drank I’ll give his rating for appearance. The beer itself has a big aroma of perfueme, and exotic wood. The taste is full of spices and caramell. This is well balanced and perfect sipping beer.

Bottled at Oliver Twist, Stockholm. Very dark brwon, minimal brown head. Spicy aroma of cinnamon and ginger, without really giving the impression of being spiced. Sweet and syrupy, full sized with lots of caramel, gingernsnaps, molasses, wood and herbs. On top of that there’s white chocolate, honey, cardamom and café au lait. A powerful, complex and unusual sipping beer.
