Commercial Description:
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

almost opaque. tan head. smells of malt, milk chocolate, heavy cream. Flavor is more sweet milk chocolate, cream, pruney, with a little cherry and a wet wood really showing at the end in a strong way. Huge body with a creamy fizz. Very compelling but somewhat sludge-y.

12oz bottle, very dark brown with a moderate dark tan head with some lacing. Roasted barley and wood. Somewhat sweet with a hops tang. A bit pricey but well worth the experience.

On tap at Mexican Food Factory in Marlton, NJ. Amazing, complex in flavor and aroma, lots of sweet fruit and vanilla as well as some darker flavors such as roast malt and a little chocolate, really really well hidden alcohol flavor considering the abv. This could sneak up on you if you weren’t ready for it.

Overall, just too sweet for me, but its still a good brew, lots of Vanilla, woody flavor, just abit too sweet for me, the alcohol is VERY well hidden, didn’t know it was so high until now, decent, would I drink it again? Sure, on occasion.

12 oz bottle. Had this once before, but forgot to rate it, so I got another bottle to try. Pours a dark dark brown with a small tan/brown head that dies quickly. Smells bourbon, wood, alcohol, malt, and vanilla. Very impressed by the smell, as it was multi-layered, and very potent. The taste is also quite good; light bourbon, oak (I think), some malt, and a vanilla aftertaste with an alcohol warming to it. For a brown ale, it is quite well-bodied, and it is one of the best I’ve had. Better this time than last time, I think.

Bottle:   Heavy brown, thick, thin light brown head, sparce lacing.   Wow, quite the complex aroma.   Soy, bubblegum, ash, charred wood, fig, minor anise.   This thing has a lot going on.   Warming on the tongue, feels quite quite fig/date based.   Does have a slight soy aspect.   Otherwise woody, both ash and charred wood, along with a young fresh cut wood.   Full bodied, moderate mouthfeel.   Further warming on the backside.   Not alcoholic, but you can tell its a high ABV beer.   Lingering wood and soy aspects.   Very minor brown sugar and maple syrup.   Pretty good stuff.   Definitely a unique wood aged style of beer.   Pretty damn unique, and tasty!

Dark brown pour with a small head. Aroma is sweet, slightly earthy, some wood and molasses. Flavor is sweet, some alcohol, wood and faint spice with the caramel sweetness. Nice and malty overall just what I like.

Bottled. darker dark brown with thin head. sweet chocolate and coffee dominate nose and flavor keeps these notes and adds booze, wood, and caramel and lighter citrus. End is weird and original with dry feel leaving a filmy feel in the mouth. Big bodied and oily texture. A weird but definitely creative offering.
