COMMERCIAL DESCRIPTION
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Served in a trappist glass. Pours an opaque, dark brown, with a thin tan head that dissipates relatively quickly. Copious amounts of lacing remain behind, however. Aroma is dense, but alcohol absolutely dominates. Let’s be clear, however, the alcohol is not indiscriminate; rather, it is strongly characteristic of brandy or cognac. Beyond that, some toasted caramel malts are barely discernible. Flavor is, again, driven by alcohol. But as the beer warms, other flavors become more apparent, including some sweetness associated with burnt sugar and vanilla. Mouthfeel is somewhat thick, but not overly viscous, with a mild hint of carbonation. In all, this is one of Dogfish Head’s finest ales. It’s absolutely strong, but imminently drinkable. The alcohol is definitely front and center, and yet, other aromas and flavors (esp. caramel, sugar, vanilla, and even a slight smoked wood) are able to come forth, ensuring that a balance remains. Strongly recommended.

Bottle. Pours a deep dark brown with a very thin carmel head. Aromas of soy, nice deep sour red fruits, alcohol, roasted malt, coca. Taste is a unique malt profile with roast, followed by sweetness and a light booze note finish. Very unique taste for a brown. After a few sips there is a coca/molasses taste

It has an almost opaque dark brown body with lighter chestnut highlights near the edges of the glass. The pour is deep, dark and thick, making a small light brown head to sit on top. This head fades out quickly however and leaves a thin ring of tan foam lace. A quick swirl gives it a wispy thin film covering and slick lace. The aroma has toasted bready malt, roasted grain, sweet brown sugar and molasses. This gives it a sweet overall character but there is also some fresh cut pine, resin, hops, dark wood and leathery notes. Its alcohol is noticeable as well. There is a lot of complexity here in this big full bodied beer. There are sweet notes of brown sugar, vanilla, molasses, raisons, and prunes. This is balanced with some floral/woody notes, pine resin, leafy hops and dark hard wood. It also has notes of toasted bread, roasted grain and warm alcohol that give it a bit of bite. This all comes on a heavy, slightly viscous texture with smooth carbonation.

Deep black colour with a beautiful brown head. Aroma of chocolate, tree bark and winegum. Excellent full-bodied taste and mouth-feel. Alcohol feels in palate but not disturbingly. Superb dessert beer for slow sipping.

Wood aged brown ale beer with lots of chocolate and caramel flavour with a hint of vanilla, this would have scored higher with me had they called it a stout or porter
