COMMERCIAL DESCRIPTION
Big Brown Ale aged on palo santo wood from Paraguay. This beer is a 12% abv, highly roasty, and malty brown ale aged on the wood of the Palo Santo tree from Paraguay. Palo Santo means "holy tree" and it's wood has been used in South American wine-making communities. We were lucky enough to get our hands on 20 blocks of the super-dense wood and the wood was added to the ageing tank after fermentation.

Served in a trappist glass. Pours an opaque, dark brown, with a thin tan head that dissipates relatively quickly. Copious amounts of lacing remain behind, however. Aroma is dense, but alcohol absolutely dominates. Let’s be clear, however, the alcohol is not indiscriminate; rather, it is strongly characteristic of brandy or cognac. Beyond that, some toasted caramel malts are barely discernible. Flavor is, again, driven by alcohol. But as the beer warms, other flavors become more apparent, including some sweetness associated with burnt sugar and vanilla. Mouthfeel is somewhat thick, but not overly viscous, with a mild hint of carbonation. In all, this is one of Dogfish Head’s finest ales. It’s absolutely strong, but imminently drinkable. The alcohol is definitely front and center, and yet, other aromas and flavors (esp. caramel, sugar, vanilla, and even a slight smoked wood) are able to come forth, ensuring that a balance remains. Strongly recommended.

OK this is my first and only 5/5 score so far. I have always been against giving a perfect score to a beer/wine/meal but I think this one totally deserves it. May sounds weird, but I had it with a medium-spiced chili con carne. I was in Heaven! The beer is not spicy at all. Nose of woods,vanilla, coffee and a bit of smoke in the end. Taste is woody just as the nose, a litle sweetness, dark fruits, whiskey. This is so complex! I have no words to describe this. Sorry to leave you guys, but I got to lay back a moment to enjoy this magnifiscient beer in this very moment. Cheers!

Smells great, smoke and dark malt. Not overly complex but rich aroma. Looks great, very dark with long lasting brown head. Tastes great, vanilla and sweet malt upfront, woody and smoky notes to finish. A bit of cherry and sweetness round out the finish. Great and interesting beer. Super silky smooth, average carbonation.

Not much aroma for me. A bit of brown sugar. Dark brown, dissipating tan head. Flavor is bitter chocolate, vanilla, some booze and cola. Sticky mouthfeel. Nice sipper.

bottle. Pours black with an average-sized brown head. Somewhat roasty aroma with some booziness. Somewhat sweet in flavor with roasty notes and a bit of alcohol warming. Smooth on the palate with a warm sweet finish. Very good.

A very dark brown color and a small light brown head. A nice aroma of raisins and banana. The first that hit me was the thickness of the brew in the mouth, but at the same time it is well carbonated. The taste has some sweetness resembling that of liqourice, raisins and prunes, and a decent bitterness as well. Great heavy beer in my opinion!

Roasty, malt aroma. Appearance is jet black with a tan head that dissipated quickly. Chocolate malt flavor with notes of toast and roast that lingers on the end. Bitterness level is moderate. Wood notes are evident, but more in the background. Mouthfeel is full with medium carbonation with a slight astringency on the end. Overall, it's a good beer that hides the alcohol well.
