The pinot noir juice adds a slight tartness to the wit that vastly improved the flavor. The balance is just right, a fusion of wine and beer, taking a style I’m not a big fan of and making it much better. Not overly spiced like many Belgians but definitely had some crispness to it. The flavor was almost a little fruity it seemed. Aroma of orange, grapefruit peel, coriander, yeast, and some sugar cookie. Thick, sticky, sugary sweet mouthfeel with orange and coriander that moves toward a biscuity doughiness before finishing with a tart, alcohol-laden bite. Aftertaste of dried fruit (raisins, apricots). Very interesting brew. I guess I had hoped to detect a bit more of that Pinot Noir...oh well, it’s still good. It was an outstanding brew, but the Pinot Noir barrels and fruit could not be detected at all. The oil of an orange is noticed, not sour, strong belgian style but superb balance. Really well made.
