COMMERCIAL DESCRIPTION
The vivid rose hue of this imperial Pale Ale comes from a combination of Munich and Caramel malts and a touch of red rice from Louisiana, birthplace of musician and collaborator Julianna Barwick (read all about that collaboration here!).

Julianna, who builds ecstatic choirs by looping and layering her voice, helped choose the ingredients for Rosabi and visited coastal Delaware to brew a test batch.

Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

Serving: 750 ml. bottle. It pours a tea like color with a loose and fading white head. The nose has plenty of citrus hops with an odd vegetal note. The flavor is a little jarring with a mix of caramel malt, citrus and herbal notes, and the wasabi adding a touch of heat and vegetal note. I appreciate DFH taking beer in new directions, but this one wasn’t a favorite.

Bottle. Pours medium copper with a half inch of not long lasting white head. Aroma mostly pine/resinous hops, faintly spicy. Medium body, playful carbonation. Flavor has a nice balance of bready malts, pine hops, leading to a long finish with faint traces of wasabi. No heat.

Bottle. Frothy, well-bodied pour, deeply golden-amber with a bountiful topping. On the palate, however, I’m not a fan. This isn’t stinging with spicy wasabi like maybe I feared, but riding atop what’s probably otherwise a nice, firm, malty ale, is the spicy but almost vegetal smolder of what must be the wasabi. Interesting culinary statement, but not a ’win’ IMHO. (#5743, 9/17/2014)

on tap at parker pie, vt. hazy dark golden pour with a very nice light beige head, good retention, creamy sticky lacing. spicy cherries and mangoes, sweet toasted caramel base, wild flowers and an interesting fruitiness - wild strawberries - perhaps because of wasabi root input, mint, danky strawberries, pine needles and pepper. average to light carbonation, medium body - oily, boozy and grassy-spicy-piney finish. not unbalanced per say. fragrant and quite unique. but still not quite my cup of tea..

Intriguingly interesting IPA that works. A solid resin forward IPA That is heavily thick in mouthfeel with relatively low bitterness. The wasabi heat is hidden until the back end end, but then gives a nice subdued kick at the back end. This one works.

Pours clear orange-red with a 2-finger off-white head. Aroma of grapefruit hops with an earthy note underneath. Medium body, a touch oily with a brief finish. Flavor of grapefruit hops with some caramel, that gives way to an earthy note. There is a light bloom of horseradish-type "heat" from the wasabi at the back. In this case, the brief finish was good, as more of the wasabi would likely have been too much.

Bottle. Light hazy amber liquid with medium off-white head. Aroma of pine, spices, citrus, toffee, bell pepper and light chili. Taste is light sweet and light bitter with notes of pine, toffee and horseradish. Medium bodied with medium carbonation. Decent enough.

Bottle. Moderate bread for the malt, heavy grapefruit and orange for the hops, light dough for the yeast, with date and maybe a hint of wasabi. Head is large, frothy, slightly off-white with excellent lacing and good legs, and is mostly lasting. Color is sparkling clear medium amber orange. Flavor starts moderately sweet and lightly sweet, then finishes lightly sweet and heavily bitter. Palate is medium to full, oily with a lively carbonation. Wow, this was an excellent American Strong Ale. Smooth and easy to drink, while being complex with a fairly heavy palate.

$9.49 bomber, Wine Warehouse. Pours a pretty amber-red with a large frothy peach head. Smells of hops, citrus, and greens. Taste is citrus, flowers, green peppers... finishes with wasabi. Interesting. I’d like to see wasabi used in other styles.

15.4 oz bottle from Uptown Market in Beaverton, OR. Wasabi comes out strong in the nose, but the maltiness goes a long way toward balancing it out...sort of. The wasabi is still very distracting, and not all that pleasant to me. I like a bit of wasabi with my sushi, but I tend to dislike it in other things, and this is no exception. I do commend Dogfish for being experimental. Keep at it, guys!
