COMMERCIAL DESCRIPTION
The vivid rose hue of this imperial Pale Ale comes from a combination of Munich and Caramel malts and a touch of red rice from Louisiana, birthplace of musician and collaborator Julianna Barwick (read all about that collaboration here!).

Julianna, who builds ecstatic choirs by looping and layering her voice, helped choose the ingredients for Rosabi and visited coastal Delaware to brew a test batch.

Citrusy Simcoe and Centennial feed Julianna’s love of hops, and the star of the show is her go-to ingredient: wasabi. What’s hoppy? … Wasabi. The Japanese root adds bittering and herbal notes similar to hops, with its subtle heat creeping in after the kick of carbonation.

Tasted on 6/12/14 from a capped 750mL bottle purchased at Bangor Wine and Cheese. Pours clear, bright copper, with a thick white head that slowly recedes to average lace, leaving residue along the inside of the glass. The nose is very interesting with a nice bread malt aroma, some traditional resin hoppiness, and the earthy wasabi. The flavor is a bit more wasabi dominated, with all of the traditional bread malt and hops still present. It has the same dusty wasabi from the dried wasabi peas I’ve had. The body is nearly full with average carbonation and a long hoppy wasabi finish.

Bottle pour into pint glass from Cigarette City. Aroma is malty bread base with sweet, almost tropical, fruit and musty smell. Appearance is cloudy light brown/orange with dark floaters, nice sparkle, finger-width off-white foamy head with nice retention and light lacing. Taste is the sweet fruit and malt base as in aroma with mild alcohol taste and late spiciness. Palate is light-to-medium bodied with soft to average carbonation, with sweet and spicy finish. Overall, this was unintentionally aged--2 years--which may not have been the best thing for it. Still good and some novelty with the wasabi but this was probably not at its best.

Pours a murky dark auburn with definite hoppy notes on the aroma. No wasabi in the aroma and very little on initial sips but definitely build up over the session. Wasabi does add a little more depth of bitterness with something I can't quite figure out. Interesting beer but nothing is buy for myself. ---Rated via Beer Buddy for iPhone

Pours a hazy reddish brown. Aromas of hops, caramel malts, kind of medicinal. Flavor is to strong for me, big hop taste, malty with a funky yeasty taste.

Bottle thanks to allmyvinyl via the cgarvieuk dregs run. Appearance - murky brown, decent head assumed. Nose - sweet line and honey. Slight hit of the spice at the back. Taste - more of the same. The spice is a long slow burn and generally subtle. Palate - medium bodied with a tangy texture and a fairly balanced finish. Overall - really interesting beer.

Poured into a snifter. 3.5 A: Well hazed amber copper color. Two fingers of frothy/pillowy beige head. Retention is about average and lots of lacing is left. 1.5 S: This smells interesting, but not good. The wasabi makes it smells like rotting vegetables. I’m not sure what else to say. It smells like a terribly brewed homebrew. Some caramel and doughiness. Orange citrus hoppiness. 1.75 T: It doesn’t taste as bad as it smells, but it’s not much better. This is just freaking weird and not in the usual good way that DFH manages. Again the wasabi gives a strange vegetal flavor. Unfortunately, it offers almost no heat, which could have helped a bit. Herbs, vegetables, tree bark, caramel, doughy yeastiness. 2.5 M: Heavier medium body. Good moderate carbonation. Too chewy for my liking. 1.25 D: This beer is tough to drink. There’s a good chance I’m going to dump some of this, which is something I’ve only ever done one other time. Wasabi gets put on my "do not brew with" list without a second thought. ★ 1,036 characters DavoleBomb, Feb 19, 2015
