COMMERCIAL DESCRIPTION
Working with our archeologist friend Dr. Pat McGovern, this beer was created to incorporate the ancient ingredients and techniques described in Egyptian hieroglyphics. It was brewed to 11.4Plato with Emmer (an ancient form of wheat) and loaves of hearth baked bread and flavored with dom-palm fruit, chamomile, and zatar. Fermentation was carried out by a native Egyptian saccharomyces yeast strain captured by Sam and Floris during a recent trip to Egypt. ABV went from 5 to 4.5%.

1st Batch, Vintage 2011. 750mL capped bottle. Clear, pour, bright orange color, thin white head. Aroma of a can of tuna (in spring water, of course). Some scent of herbal tea (chamomile), and an off-wheat grainy smell. Tastes of stale chamomile flowers, some of the odd-wheat grain that is in the nose. Then it all finishes up with a odd spiciness on the palate. Overly sessionable body, very light, low ABV; makes this welcoming. Love the herbal tea character with the stale bread notes. Love it. Some of the other ratings I’ve read on this beer have been against the beer. Overall, this is one of the best "unique" off-center ingredient beers from DFH that I’ve truly enjoyed.
This beer was my way of celebrating Epiphany Day.

Tap at the Porch Key West into a snifter. Pours a moderate golden color with a well carbonated body and a small white head. Aroma is of some odd meaty notes, spice coriander, light citrus, bread and odd herbal notes. Taste is clean, wheat malts, coriander, light lemon peel, odd spicy notes, some herbs and an underlying earthy taste. Definitely an interesting beer.

Clear orange colour and crappy head. Roasty smell. Grainy and slightly sour with some earthy muddy flavours in the finish. Foamy.

2011 vintage. 750ml into an over sized wine glass. A - Dark amber hue. Small bit of lacing and edging. Very clear with tons of bubbling. S - Pizza flavored goldfish. That is all I can think of. Bread and spices. Very peculiar and not very inviting. I don’t want to smell this anymore. T - More of those weird spices. They seem almost synthetic. This is followed by some sweetness and herbs. Bready and grainy. Light mouthfeel with decent carbomation. O - Did not enjoy this. I’m usually a big fan of these crazy dogfish head beers including the ancient ales. This was pretty terrible though. I respect the history and work that went into it, but its just awful. Waste of money...

Bottle - 750mL crowned. Amber pour with a short foamy white head. Aroma is very grainy with strong, dusty yeast. Faint fruits notes in the background as well. Taste is different. The grains have an odd flavor not unlike a multigrain bread. The yeast if upfront here as well with subtle fruit notes and soft herbal notes. Body is light-medium with a moderate, bubbly carbonation. Ends with more bread and grains with strong yeast notes, light fruit and mild herbs. Unique but still tasty. It will grow on you.

On tap. Pours with a hazy orange body with a massive, rocky white head with great retention and lace. Aromas are spicy, fruity, citrus, herbal, pomelo, tea, hoppy, bready malt, medium esters. Flavors are herbal, sort of an odd milk chocolate note, tea, medium bitter. Malty. Lively bubbles. Dry.

Draft from Coalhouse Pizza, Stamford, CT. For all the pomp and circumstance surrounding this beer, it boils down to a solid, light session beer with notes of orange and malt liquor. The yeast and emmer provides the beer a light, fluffy and smooth texture of belgian ales. Not a bad beer, but nothing to search for.

From the tap poured an amber color with a fair amount of head. Spicy malty flavor with a lasting grassy finish.

750ml Bottle: Aroma of vegetables, herbs, spices, over-cooked pasta, weird bread, slight chamomile, Chex mix. Poured golden/amber in color with a small, loose, off-white head that disappeared quickly, except as a film around the edges. Clear. Sparkling. Flavor is lightly sweet and lightly bitter. Tastes much like it smells, of vegetables, herbs, spices, bread made in a strange oven, and Chex mix. Light to medium body. Lightly dry texture. Average carbonation. Vegetable, herb, spice finis is slightly dry. Like I am eating some strange Indian bread.

Grain husky smell of ass and cumin, not trying to be funny. Hazy amber, thick head. Lemon and grilled beef flavor, heavily seasoned with cumin. Maybe it is the chamomile but it comes across as cumin, almost curry, but very savory. Marijuana in the finish. Pretty dank actually.
