COMMERCIAL DESCRIPTION
Working with our archeologist friend Dr. Pat McGovern, this beer was created to incorporate the ancient ingredients and techniques described in Egyptian hieroglyphics. It was brewed to 11.4Plato with Emmer (an ancient form of wheat) and loaves of hearth baked bread and flavored with dom-palm fruit, chamomile, and zatar. Fermentation was carried out by a native Egyptian saccharomyces yeast strain captured by Sam and Floris during a recent trip to Egypt. ABV went from 5 to 4.5%.

750ml bottle from Liquor Loft. Yellow pour with thin off-white head. Aroma is corn and grain. Tastes are strange - grain, yeast, herbs, bread, vegetables, flowers, and honey. Weird, but complex.

From notes: Poured hazy straw color, with a 1-finger white head. Aroma was odd: strong biscuity yeast, citrus of some sort, and maybe corn. Body is somewhat fizzy and slightly thin. Flavor of mild citrusy fruit that I can’t place mixed with grain and a yeasty note in the finish. The odd fruit flavor becomes more pronounced as it warms.

Pours a clear golden, with a nice off white head and decent lacing. Aroma of toasted bread, honey and mild fruits. Flavor much of the same, but with some rather odd herbs. Very smooth and finishes sweet with some tea and honey notes. Overall not bad, and easy to drink (if you can handle the flavors).

750 ml bottle from Binny’s-South Loop. Pours a clear orange-gold with a finger of fizzy white head and a good deal of rising carbonation bubbles throughout. Aroma of sweet malts, toasted sugar, chamomile, dried fruits, nectar, and crackers. The flavor is a little fruitier, but has the same herbs and chamomile, crackers, and sweet malts. Light-bodied, with high carbonation and a crisp, sweet, malty mouthfeel. Interesting beer.

The yeast is really bready and rich and interesting. It can’t save the effort that went into this interesting, but really beery beer. It’s so bready, and so grainy, that there is little left to the palate than to think you are drinking a glass of dough. Sorry to say this is not my favorite. In a more traditional format, the yeast would have shone bright.

Bottle .. Had twice over the past few months .. . an interesting beer indeed .. . pours a hazy caramel .. good healthy foam .. . light spice, prune, yeast, wheat, raisin, and more spice .. . light mouth, quite effervescent .. . love the background of this beer but a novelty at best .. . . They told me I had type A blood, but it was a Type-O.

A - Pours a clear golden color with a finger of frothy white head. The head fades down at a normal pace leaving behind some good lace. S - Aroma is a mix of chamomile and other floral elements, sesame and other spices, some light fruitiness, wheat, and some yeast. T - Starts off with a mix of chamomile and other flavor flavors with some wheat and some spices alongside. Through the middle, sesame comes through with some yeast flavors and some fruity flavors. The finish is a mix of fruity flavors and floral flavors with some yeast, wheat, and a bit of spice. M - Medium-light bodied with moderate carbonation. Feels smooth with a dry, spicy, and lightly sweet finish. D - Very drinkable. Lots of different and unique flavors mixed in, but the overall beer is nice and balanced and very sessionable.

750ml bottle. Pours a clear golden color with active carbonation. White head falls quickly to ring the rim of the glass. Aroma has honey, chamomile, fruit, spices. Taste is semi-sweet and very bready with florals. Medium bodied with an oily texture. Not bad.

Very slightly hazy gold/yellow. Aroma of grain. corn, some earthy spice, herbs of a various sort, almost peppery. Taste is more spiced, almost minty. This is like a winter warmer spiced beer without the dark malt. Not sure if I like it, but it is interesting.

This gets points for craft and creativity. I love the idea of recreating ancient ales. This smells and tastes of sweet spice and is candidly, over the top. The carbonation is all that makes it palatable. Good effort, poor execution.

Bottle poured, Amber color, light head dissipates quickly, aroma is bread and not in a positive way, mouth feel is soft light and effervescent, flavor is just not good, I like the daringness of dog fish on this one but the beer is just not good
