The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didn’t really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF will first be brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010.
Plans call for Saison du BUFF to be a 6% alc/vol Saison brewed with parsley, sage, rosemary and thyme. This beer will be brewed three times, once at each brewery using the same recipe. The expected release dates for each brew are as follows:

Bottle. This is a super spicy and flavourful Saison. This is the beer I would serve at thanksgiving if i could find it.

A: Golden Straw Hue, Passes All Light, White Head Ring, Some Lacing S: Lemongrass, Thyme, Sage, Rosemary, White Pepper T: Lemongrass, Sage, White Pepper, Rosemary M: Average Carbonation, Light to Medium Bodied, Spicey, Lemony Overall, if you like saisons with lots of spice, then this is your beer. The beer delivers exactly as advertised, so if it doesnt sound appealing, then dont drink it. But a really good saison.

Smell a little sour w/herbal undertones...(year old+/-) appearance is somewhat cloudy.... But the palate really shines. Very nice mouth feel and the herbs are still there in small amounts. Sweet herbs, like a very good accoupliment to a lamb dish or cheese plate. Well put together..... Even after a year old. Do it again....Stone DFH V......

355ml bottle. Strangely, this was exactly what you’d expect. I tasted all the herbs and the beer, but it managed not to be gross, just strange. The rosemary and thyme stand out, but they are all there and there is a decent citrus and caramel malt behind them. Overall, better than expected, not just a gimmick.

I had this one on tap and the DFH Alehouse in Falls Church, VA. With an all-star collaboration involving DFH, Victory, and Stone, expectations were high for this one. A: Clear yellow-orange with very little head and moderate carbonation. S: Very bitter smell of grapefruit and lemon, accompanied by a VERY strong floral presence. My wife described it as a "rose garden." She’s right! T: Hop forward with a bit of an alcohol burn in the middle. However, this compliments the citrus character very well. This one is very yeasty - almost like "liquid bread." M: Large amounts of foam clings to the glass, but that is to be expected from this style. Sweetness and bitterness dissipates after a few sips, soothing the taste buds with a cushion of yeast. D: I finished half the glass after finishing my note taking and still couldn’t get enough. I easily finished this one off, but didn’t consider ordering another. Overall, this was a wonderful example of the style. I still feel the one produced by Victory was much smoother and enjoyable - it had a refreshing quality that was sorely lacking in the DFH version.

10/19/2010: Dogfish Head Saison du Buff (Ale brewed with parsley, sage, rosemary & thyme)... Aroma: Very herbal with notes of curly leaf parsley, dried thyme, grapefruit, and even a hint of spruce. Appearance: Sandy yellow color with a very large head of dense, rocky, off-white to light beige foam; opaque cloudiness; high levels of fast and lively carbonation; wonderful puffy lacing. Flavor: Very nice and sophisticated balance of herbs (light rosemary; scant sage) and tangy citrus fruits (grapefruit); honey mango sweetness; lemon pepper spiciness; pleasing grassy bite in the finish; threads of dry biscuit maltiness and peppermint hide throughout. Palate: Medium-bodied; good mouthfeel; not overcarbonated, but nice and airy. Overall: Excellent offering! Interesting and very pleasing; I really like this interpretation of a Saison!

Appearance: Pours deep orange hues under a beautiful white head fades slowly to a bubbly and filmy head bordered by a full collar of lace. Slow stream of bubbles. Swirls with more lace.
Nose: Floral and herbal from the front into the middle where citrus blossoms with grapefruit. Pine needles along the edges. Herbal fantasia – thyme, rosemary, sage, mint leaf, and lavender. For spices there is fresh and crystallized ginger with a sprinkle of cumin. Aloe and dew-dropped green grass.
Palate: Massive herbal and spicy notes. Big hit of ginger in the back of each and every swallow. Bitterness of green grass and grapefruit skin with lots of pith for parching thirst-inducing enjoyment. Fresh dried rosemary, thyme, and sage. Mint, lavender, and rose water in the breath. So many complex flavors working together in beautiful harmony – for a lot of big flavors they never overwhelm.
Final Thoughts: When I opened the bottle it was as if a spice market and greenhouse had made a baby together, that baby being the beer in my hand. Amazingly complex and fantastically of the earth. A liquid harvest.
