The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didn’t really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF will first be brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010.
Plans call for Saison du BUFF to be a 6% alc/vol Saison brewed with parsley, sage, rosemary and thyme. This beer will be brewed three times, once at each brewery using the same recipe. The expected release dates for each brew are as follows:

Good beer. Nice taste it was like blended herbs rather than being able to taste the herbs individually. Good sourness and nice carbonation.

Bottle: The aroma consists of spicy Belgian yeast, light-moderate citrus, lemon peel, and light pepper. It pours a transparent dull gold/yellow with a small soapy head that eventually fades to a thin film. There is a lot of soapy lacing on the sides of the glass. The flavor starts with citrus, Belgian yeast, and some light apple. The finish has light lemon peel and a touch of spice. It’s medium bodied with mild and a somewhat soft mouthfeel. Overall, this is too sweet for a Saison.

Crisp with nice citrus and spice. Flavors of pepper, herbs, and honey. Very unique.

Poured from a 45d bottle into a Victory Golden Monkey Tulip. Pours translucent golden yellow with a fast fading foamy head. Herby malty notes abound with mild citrus (lemon). Light, effervescent mouthfeel makes for easy drinking. The herbs boasted on the label are subtle but make for a unique drinkable ale. A good beer but nothing extraordinary to write home about. ---Rated via Beer Buddy for iPhone

Bottle (12 Oz): pours light golden with nice soapy white head. Smells a little spicy and funky. Tasted a little tart (lemon) and sour. Very drinkable even though not my favorite style.

My 4800th rating, says RB. Bottled on 06/10/14. Nose is very herbal, more rose hips and lavender to me than the Simon and Garfunkel herbs, though there’s other stuff too -- citrus, light pepper, cool mint, faintly jammy fruit, and additional familiar saison yeast metabolites. Pours bright yellow-golden with plenty of carbonation and a soapy bright white head; body is fullish, crisp, and a tad chalky. Taste is sweet but controlled, heaviest lemon, ah, there are more of the pizza and game herbs, but there’s also slight vanilla in with the lemoncit, good wheat character, and nice basic malt. It works because everything is fresh, clean, and zesty -- the base isn’t anything special, but strong enough to support the adjuncts, and smart enough to get out of the way. Enjoyable.

Are we not counting the Victory and Stone versions of this as the same beer? Well, this time I got a lemony, herbal, cough drop, hoppy aroma. Clear, pale straw yellow with a floofy head. Good bottle, decent label. Lemony, meaty flavors - would pair well with Mediterranean/Moroccan food, like preserved lemons. Some mineral tones. Medium body, lemony herbal finish. ABC, Betton.

Fresh bottle picked up at the brewery. Very good saison. Nice herb aroma, medium dryness, light bitterness, refreshing, good carb. Would buy this collab again.

I really liked this. A nice light flavor that is both floral and herbal. It has a great zest to it. And cheap to be coming from these brewers, which makes it quite sessionable.

I think parsley and sage first with this one. But it’s nice, even though the herbs confuse any hop flavor. It’s easy to drink even with its complexity.

I poured this from a bottle into a tulip glass at home. Last week, I enjoyed it from the tap at Tap & Mallet when visiting a friend in Rochester, NY. The following is based on my experience at home with a bottled version. It pours clear. The head is not as robust as one finds in many saisons. That said, it seems well-carbonated. The aroma is not strong, with hints of citrus and phenols. The bitterness is light to medium, but there is a fruitiness to this beer that is characteristic of some hops as well as the saison yeast. The finish is not as dry as many saisons, having a sweeter aftertaste than many others. Overall, this is a very nice beer worthy of the attention of any fans of saisons.
