A bit of funk on the nose with the herbal coming through sweet, mostly candied sage and thyme. Light silky body yields to a dryer finish that makes each sip a quencher. The flavor reminds me of a good marzen/saison mix. There’s some biscuit here that’s balanced well with the herbs, which are surprisingly sedated. A refreshing peppery hint pops up in the aroma and the middle of tasting this. A nice specialty brew that may well be my favorite saison so far. A restrained hand lent well to this project. Nice job. Pours a light copper color with a finger or so white head the dissipates to a slight film with a sticky ring.... Aromas are nice citrus, pepper, with big notes of floral and herbal whiffs dancing out of the glass. On the palate you definitely get herbaceous flavors of sage, thyme and rosemary but they are more balanced on the taste than on the nose. Behind the herbaceous qualities you definitely get the farmhouse yeast flavors slightly tart slightly funky with a hint of pepper and a dash of round malt... overall a tasty beer that would go great with a nice lamb burger !

Pour was thin light and light golden. Champagne bubbles. Very floral aroma with pineapple and apples. Very light taste, citrus, cider, malt and hops. Thin pallet somewhat dry. Overall, impressive sasion. Not my favorite style but this one is pretty good.

Bottled. Poured into DFH’s tulip glass, cloudy golden color with thin white head. Beer was fun to smell, perfumey picking up on the rosemary, sage and thyme. I’ll sum it up as smelling like seasoned bread. Taste brought out more spices like basil, sweetness, and citus notes. Very much enjoyed this, should grab one for a Italian dinner.

Bottle @ Bridgetown Beerhouse... Poured hazy golden with a bubbly white head. Creamy body, nice texture on the palate. The spicing was nice and it wasn’t overdone as the malt sweetness did a good job balancing. Hints of basil, strong amount of sage, candied sweetness and a drying yeast spice sweetness. Also notes of herbal and sliced tea with cinnamon.

Bottle as part of a head-to-head between the Victory and Dogfish Head versions. Both look identical with a large white head that quickly dissipates to just a tiny cap over a light golden color, similar to a pale lager. The nose on the Victory is much more understated than DH’s. Victory has some herbal, spice notes and only a faint funk, where the DH has a far more pronounced funk. The flavors follow the same pattern with DH having a far more robust body, and a more dominant "Belgian" tasting yeast characteristic, where the Victory is thinner. Both have tons of mixed spices, though none stand out to dominate the flavor. The mouthfeel is similar, both on the higher end of the carbonation range, but Victory’s is slightly fizzier. I’d say overall, Victory’s is solid, but not as complex or as good of a saison as DH.

Clear gold with a large head. Aroma is full of rosemary, earthy spice, yeast, and light sweet malts. Flavor is heavy on the rosemary. Tastes like a spice rack. I kind of enjoy the spice bite but at the same time it is overwhelming. Back and forth on this one.

12 oz. bottle. Pours pale gold with a thin, quickly fading, off-white head. The aroma is very herbal, with notes of mint, dill, and thyme. There are also notes of apples, tea, bitter orange peels, and hay. The flavor is bitter and sour. The palate is light to medium, lively, and dry. The aftertaste is long and sour. Overall, this is a very interesting and unique beer, but the flavor is a little unpleasant.

12 oz. bottle from Sea Trader Liquor & Deli - Pours a clear golden color with a one and a half finger thick off white head. Nice layered lacing. Lively carbonation. Aroma is herbs and spice. Flavor is lightly sweetened toasted malt, herbal and floral hops, and spice. Medium body. Finish is quite smooth. A nice beer.

Bottle. Pours a slightly cloudy straw with a medium-sized white head. Aroma is intensely perfumey. I definitely pick up the sage and rosemary; also some citrus. Struck me as odd at first, but it grew on me. Flavor follows the aroma, just more muted. Chewy maltiness, dry finish. Intriguing, enjoyable.
