The idea for this beer germinated way back in 2003 when the three guys (Sam from Dogfish, Greg from Stone and Bill from Victory) formed the BUFF alliance (Brewers United for Freedom of Flavor) - a noble endeavor with the goal to highlight the passion and camaraderie of the American craft brew movement.
So, BUFF didnít really do anything (beyond talk a lot of talk) until 2010 when the three brewers finally got together to jointly brew at beer at the Stone Brewery. Saison du BUFF will first be brewed at Stone and then replicated at each of the other two breweries - same recipe, same ingredients, three different breweries throughout 2010.
Plans call for Saison du BUFF to be a 6% alc/vol Saison brewed with parsley, sage, rosemary and thyme. This beer will be brewed three times, once at each brewery using the same recipe. The expected release dates for each brew are as follows:

A good dry Saison with a bit of a twist of herbs and spices. It may not be outstanding, but itís an interesting experiment to taste.

12oz bottle, cloudy golden orange pour. Really nice herbal aroma with sour fruit. Taste is big on herbs and grassiness, light fruit and spicy yeast. Nice brew.

I get the spice from the parsley and sage and a grapefruity aroma from this pale hazy brew with a hint of orang and a white head. The 3 spices come out greatly in this medium bodied brew with a good carb. There is a hint of bitterness weaving in and out through out the taste. There is a base line sweetness that runs all the way through as well.

Should be called "Simon & Garfunkil" with these ingredients...but combined comes across as a peppery finish. Nice beer from a worthy collaboration.

Pours a yellow color with a bubbly white head. Heavy herbal notes with catty hops, ammonia, and sage. Nice supple mouthfeel. I dont know why but this beer will always remind me of tidy cat cat litter.

Bottle: The aroma consists of spicy Belgian yeast, light-moderate citrus, lemon peel, and light pepper. It pours a transparent dull gold/yellow with a small soapy head that eventually fades to a thin film. There is a lot of soapy lacing on the sides of the glass. The flavor starts with citrus, Belgian yeast, and some light apple. The finish has light lemon peel and a touch of spice. Itís medium bodied with mild and a somewhat soft mouthfeel. Overall, this is too sweet for a Saison.

Crisp with nice citrus and spice. Flavors of pepper, herbs, and honey. Very unique.

Poured from a 45d bottle into a Victory Golden Monkey Tulip. Pours translucent golden yellow with a fast fading foamy head. Herby malty notes abound with mild citrus (lemon). Light, effervescent mouthfeel makes for easy drinking. The herbs boasted on the label are subtle but make for a unique drinkable ale. A good beer but nothing extraordinary to write home about. ---Rated via Beer Buddy for iPhone

Bottle (12 Oz): pours light golden with nice soapy white head. Smells a little spicy and funky. Tasted a little tart (lemon) and sour. Very drinkable even though not my favorite style.

My 4800th rating, says RB. Bottled on 06/10/14. Nose is very herbal, more rose hips and lavender to me than the Simon and Garfunkel herbs, though thereís other stuff too -- citrus, light pepper, cool mint, faintly jammy fruit, and additional familiar saison yeast metabolites. Pours bright yellow-golden with plenty of carbonation and a soapy bright white head; body is fullish, crisp, and a tad chalky. Taste is sweet but controlled, heaviest lemon, ah, there are more of the pizza and game herbs, but thereís also slight vanilla in with the lemoncit, good wheat character, and nice basic malt. It works because everything is fresh, clean, and zesty -- the base isnít anything special, but strong enough to support the adjuncts, and smart enough to get out of the way. Enjoyable.
