Headless clear golden pour. Rather leafy, roughly dry and mundane nose. The alcohol comes across rather aggressively, while more leafy dryness and spoiled/rotting apples flavours emanate. Rather simplistic example, though well executed in its dry/sweet balance. Adequate carbonation fades rather rapidly, but initially supports the body well.

Échantillon au Salon des Métiers d’Arts 06. Jaune claire. Arome de pomme fraiche, mais sec. Goût de pomme sec version champagne.

Woody, tart and lightly perfumey and floral aroma. Clear golden body with plenty of bubbles but no real head and no legs. Dry, leafy flavour is tart with very little apple character. Dry in texture with strong carbonation. Not unpleasant but not terribly exciting either. I vastly prefer the other two offerings from this house. Sampled at Mondial 2006.

Verre de dégustation, provenant d’une bouteille de 750 ml, dégusté au Festival Bières et Saveurs 2006 (Chambly, QC) lors d’une conférence de Stéphane Morin. Arôme: Odeur de pomme et de fleur. Apparence: La couleur est paille très pâle avec une faible densité de bulle. Saveur: Goût de pommes avec une touche de miel. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture minérale. Moyenne effervescence en bouche. Présence de pomme chaleureuse en arrière goût. (Rating #633)

A citric wooden character is developed by tart, dry apples...Sparkling vivacity pushes through the feeble sweetness...Dry black pepper touches the back of the palate...Nothing special in its champagne method hard cider category, but still a very fine meal accompaniment...

Small sample from the bottle (750 ml) at the Mondial de la Bière in Montreal, 2006. Very pale yellow in color, sparkling and bubbly with no foam or legs in the glass....fresh dried apple/appleskins aroma with only a faint touch of sweetness....beautifully tart throughout with pleasant softening honey-orange tones in the midpalate which is the sweetest point in the taste....finishes dry, a bit peppery, with light alcohol....supple, light to moderately full body and perfect carbonation. Not even close to the complexity and grandeur of the producer’s two ice ciders, this is still a fine example of a much simpler, daily-drinking style. Unquestionably a ciderhouse to watch!
