This dark golden cider poured with sufficient carbonation to produce a thin layer of tiny bubbles at the top of the glass. The aroma is fruity and sweet. I found the flavor to be quite sweet and syrupy (compared to other ciders I have tried) and there was a noticeable alcohol finish. Sweet apples are easily recognisable with some alcohol also detectable in the background. Mouthfeel could more syrupy and I would have appreciated a bit more sweetness. Aroma of red apples, brown sugar, some vanilla and slightly sweet. Flavour of apples, sugar, some light sweetness and light alcohol. Rich syupy mouthfeel, slightly dry. Clear golden-copper with excellent viscosity - coats the sides of the glass. Apple skins, browned pulp, brown sugar, honey, vanilla flavours mingle freely and leave a lasting sweetness on the tongue. Somewhat sticky and syrupy though perhaps served just a bit warm but the carbonation brings out the apple flavours magnificently. Sampled at Mondial de la Bière 2005.
