375 ml. green bottle @ ’t Antwaerps Bierhuiske. I have been morbidly curious about this one because it just sounds like a terrible gimmick. I like raw chicory but not cooked plus it just sounds like he put it in here because he had it growing on his farm. The label makes a different argument, sitting the prosperity that chicory brought to his youth & chicory based dishes in his youth. Yeah, chicory is definitely featured in traditional Belgian cuisine in case those things sounded odd to you. It comes to say that this one was a big surprise, really, really good & fulfil the promise of the potential flavours & qualities the Hof ten Dormaal brews have been hinting at me for some time now, finally coming to fruition. Cloudy golden with a white head. Dominated by the typical Hof ten Dormaal “other” grains / apparently barley showcasing itself at its best, spicy with love esters, great yeast with some caramel sweetness blended in towards the end, I can pick out sweet (not the bitter parts) of chicory if I try, maybe, herbal, sweet malty, touch lemon maybe a vague vegetable thing. Fluffy, well carbonated saison body, brilliant stuff. Love it a lot.

375 ml bottle. Cloudy amber color. Sticky, off white head.. Aroma’s: yeasty, fruity, somewhat malty sweet, hint of alcohol. Again, the yeast character is very reminiscent of Dupont. Flavor is lightly sweet (caramel) and somewhat bitter. Medium bodied. Finishes somewhat dry and rather bitter. Another lovely artisanal farmhouse beer.

375ml. Hazy amber and brown with small and dirty/white head. Nose : bread like malts, banana bread. Fruity peach and mandarine like aromas. Pepper and some other spices. Sip : medium body with oily texture. Low to medium carbonation. Sweet cereal flavor from the start. It hits with peppery and fruits like banana and peach flavors. Well balanced. It has bitter hops to mingle with overall cereal flavor on the end but they are more peppery then bitter. I must say I really enjoy the body thickness unusual for this kind of beer. Extra points for that. Good one.

Whole Foods, Bowery 375ml ($6): Pours orange with a white head. Aroma is fruitiness and farmhouse funk. Taste is slightly sweet. Has some hoppiness towards the middle. Feels like a floral and little spicy saison throughout. Kind of lame aftertaste though.

(37,5 cl bottle, under the name of Winter 11) Murky brass coloured, hazy, head disappears quickly. Aroma is spicy, peppery, with a cellary note and, well, witloof. Not very far away from that cooked vegetable aroma sometimes found in beer gone bad, but different and better. Taste is medium bitter with a light sweetness. Carbonation is lively, bubbles seem big. It’s certainly not perfect, but I have a soft spot for endives.

Bottle at Eulogy. Cloudy amber with a big foamy white head. Somewhat muted flavors. Creamier toasted flavors than most wheat beers but still a bit limited. Very fizzy in the bottle. Big and foamy but still very much beholden to the style. Better than a Hoegaarden but still, well, a wheat beer.

Explosive opening, cork to the ceiling, almost lost an eye!
1st pour : nose is alcohol, yeast, acetic. Golden color with sediment, carbonation. Taste like beer with alcohol added to it, cork taste. Full body and plenty of residual sugar.
2nd pour : Cloudy, more sediment in suspension, appearance still ok. Nose of vegetable. Extreme carbonation, so fizzy it’s impossible to drink. Ended up in the sink. Anyway, who would want to put French endives in a beer!

Bought a small bottle as "Hof ten Dormaal’s "Winter ’11"" at the Whole Foods Bowery story, in the 12% importers section. This is nice and tasty. Deep hazed gold, huge foamy head, Musky, Brett aromas of strong yeast and malt, with some souring hop backing. Smoothest finish, warming and very tasty. Banana, clove, holiday spices. Rich, lactic, raw. Totally awesome.

Nice experiment to use witloof in this beer, but there is no specific witloof taste. The beer has a blond, amber colour, white foam. Earthy taste: bitter and the taste of herbs. Nice brew.
