COMMERCIAL DESCRIPTION
The first in Driftwood’s Bird of Prey Wild Ale series, this sour ale was inspired by the Coopers Hawk that took residence in the brewery for a full 24 hours. Brewed in its honour, this wild ale spent a year in a mix of American and French oak wine barrels. Tart and funky, this beer can be aged a very long time, but is equally enjoyable now.

Bottle 660ml(?) Pours dark salmon/amber with low off-white head. Aroma is of fruits, sourness, vanilla. Taste is of sourness, fruits, berries, wood, wine barrels, vanilla. Palate: Somewhat dry. Light-medium body. Soft carbonation. Overall: Very nicely balanced. Interesting fruit features.

Pours a clear red with a small offwhite rim that leaves some lacing. Nose is of bubblegum, fruits and light vinegar. Taste is dry and fruity, moderately tart and just classy. Flavors are of cherry and oak but maybe more on the juicy cherries side. Body is light to medium, carbonation moderate and mouthfeel just vinous. Overall a fine Flanders red, I didn’t expect so much from it!

bottle shared by mathieuc, thanks bro! pours almost clear bright orange-red with a small reviving light beige head, leaving delicate lacing. spicy bretty cherries, tasty nuttiness, dry leather, touch of caramel, wood, citrus zest, bitter cocoa beans, light acidity - very nice complexity - light welcoming acetic notes, balsamic notes, lots of vinous character too. light carbonation, light body - oily, tannic and dry woody-grassy-spicy finish. very tasty and good flanders red. solid.

Two year old bottle. Pours a medium white head that dissipates to the side after one minute. The body is a reddish burnt orange colour. Aroma of vinegar and sour cherries. Good tartness and sweetness balance in the palate. This stuff is great, a perfect beer for a fall Sunday or any other day of any season. Great stuff

Bouteille 650ml, gracieuseté de Damon lors du CanBIF Fall 2014. Couleur bronze foncé, mousse beige foncée évanescente. Arôme boisé, vinaigre balsamique, fruits rouges, acidité, un peu vineux. Goût de fruits rouges acides, vinaigre de cidre, acidité moyenne-faible, levure sauvage, tannique. Carbonatation moyenne-élevée, corps moyen.

Bottle: Poured a reddish color ale with a nice thick foamy head with excellent retention and some good lacing. Aroma of tart notes with some oak and cherry is very pleasant. Taste is a super well balanced mix of tart notes with some oak and cherry with light residual sugar notes with almost no acidity. Body is quite full with good carbonation and no apparent alcohol. That is a world-class Flanders Fed with good level of complexity and perfect level of drinkability.
