COMMERCIAL DESCRIPTION
A small batch of Serum, our super hoppy, amber XXIPA, has been aged in charred Kentucky white oak bourbon barrels! Infused with smoky notes of charred oak, vanilla, and caramelized sugar, Oak Aged Serum is a truly unique treat for hop heads and bourbon aged beer fans alike.

Bottle tasting from bomber. Hazy dark copper with minimal offwhite head. Oak, vanilla, booze, toffee, roasted malt, hint of citrus hops. More odd than good.

Bomber. Pours hazy deep amber, maybe reddish with a good-sized head. Smells of bourbon, sweet dark fruits, and perhaps some pine. Taste is a slightly sweet malty bourbon, vanilla, hoppy concoction. Earthy and alcohol flavors pour into my mouth.

Draft. Orange pour with tan head. Some vanilla, bourbon and oak with lighter spice and grassy ipa aromas. Flavor is nice vanilla and oak, ipa is unrecognizable.

Poured from bottle into a snifter Appearance – The beer pours a hazy reddish mahogany color with a small fizzy white head. The head fades very fast, leaving only a light level of foamy lace on the sides of the glass. Smell – The aroma is rather massive of a nice mix of boozy and oaky, sweet, and very lightly hopped smells. The sweeter aromas are mostly of a toffee, vanilla, and caramel smell mixed with just a hint of dark fruitiness. These sweet smells are the heaviest with the lighter hop aromas of an herbal and earthy nature being very faint and the least heavy of all the aromas. The boozy and woody aromas are the ones that straddle the hop and sweet, giving the brew an overall nice and warming smell. It is a rather enjoyable aroma overall. Taste – The taste begins with tons of sweetness of a caramel and toffee flavor. The oaky flavors are present from the start with them growing stronger as the taste advances and being joined by a boozy and lighter vanilla flavor which overall gives a very bourbon like taste to the brew as it moves onto the end. The hops in this one remain rather light, with a bit of a grassy and herbal hop that are present upfront and which remain relatively constant till the end of the taste. Just a hint of a grassy flavor and a little bit of an earthy flavor join the tongue at the end, and mix with the rather strong sweet and bourbon boozy and barrel tastes to leave a warming flavor on the tongue. Mouthfeel – The body of the beer is thick and syrupy with a very light level of carbonation. For the huge thick sweet and bourbon woody flavors of the brew the thick body and lower carbonation are fantastic and end up creating a very nice slow sipping and warming feel. Overall – While there is very little hop left in this one as opposed to its originator brew, it does make for a good and thick tasting old ale/barleywine. Even while I was expecting something with much more hop flavor, this one I actually rather enjoyed and was a good warming sipper.

Bomber from Whole Foods Foggy Bottom DC. 5/23/14. Pours a murky amber color with a thin frothy tan head. Decent head retention. Aroma of toffee, bourbon and a bit of toast. The taste is citrus, tropical hops, bourbon, toffee, mild wood and raisin. Medium bodied, slight lingering bitterness. Definitely no longer comes across as a DIPA.

Shared bottle at Craft. Poured hazy chestnut colored with tan head. Nose was oaky bourbon, caramel malt, vanilla, hops. Tasted rich and complex, with oaky bourbon and caramel malt up front, the hops hitting at mid-palate and heavily, and a strong complex finish. This one was very good.

On tap at Frisco Tap House & Brewery in Columbia, MD. Lightly hazy, trusty brown with an off-white head and good lacing. Aroma of caramel, vanilla, bourbon, oak and white bread. Taste of bourbon, vanilla, caramel, alcohol, oak, brown sugar, figs and a bare touch of citrus. Full body and medium/low carbonization. Bottle. Clear copper with an off white head. Aroma is pretty much straight bourbon barrel. Taste follows pretty closely. Oak, vanilla and very buttery. Not much in the way of the base beer. Rich sticky palate. Tasty but the base beer really could be anything.

Bottle thanks to Dmac. Pours out a cloudy copper, almost .apple cider color with a small white head. Aroma is of bourbon, muted citrus, oak, caramel, burnt wood and light alcohol. Taste is bourbon forward, lots of charred oaky notes, sweet caramel, subdued citrusy hops. More like a barley wine but still interesting.
