COMMERCIAL DESCRIPTION
Serum is our version of a Double(Imperial) India Pale Ale. It is aggressively hopped at several stages of the brewing process including a dry hopping that takes place little by little over a 2 week period. With an OG close to 19Plato, this beer is big and hoppy, yet has a strong malt backbone that keeps the huge hop bitterness from being overbearing. Available in VERY limited quantities and only at our pub locations.

Pours dark orange with little/no head. No tracing but very hoppy, although well balanced. Not what I would consider a palate wrecker. Glad I stopped at Duclaw on my way to Delaware for this one

Poured pretty much flat. No lace to speak of. Clear, copper hued brew. Nose is slight with some fruity hops and a hint of malt. Medium bodied with a flat mouthfeel, lil resin. Sweet malts greet you up front with notes of caramel and faint grassy notes for the hops and a lil booze. Lightly sweet finish with a bitterness that just does,nt cut it. Meh. Bottle from statelineliquors.

Serving: Draft. Pours a deep orange color. Powerful nose packed with hops. Heavy resin, light fruit, some plastic, and phenols. A little obtuse and overpowering. Blunt force trauma.

Draft. Pour is an awesome dark orange color with virtually no head. Aroma is sweet with a big malt nose and some caramel. Mouth is of caramel syrup, mostly malt with a moderate hop bitterness. Not much lacing at all. Not really a bad DIPA but could use a bit more balance on the palette.

UPDATED: FEB 25, 2013 Pours a dark orange color with a sweet aroma dominated by malt. The taste is similar and I detect no hops whatsoever. This reminds me of the malty barleywines or some of the dopplebocks. The beer is not bad but not what you expect from a DIPA that are usually hop monsters. Other reviewers mentioned strong pine and citrus aromas so perhaps my beer is not fresh (no date on the bottle). 2/25/13: I decided to try this one again and I think my previous rating was generous. This beer has one of the strangest aromas. It is very sweet but not just caramel malts. There is something else and I am not sure what but I don’t like it. Despite this being a DIPA I do not notice any hops. None. There is no date on the bottle so I don’t know if it is old but I sure hope so.

Bottle. Appearance: very clear amber with quickly dissipating off white head. Aroma: very sweet, caramel, alcohol and touch of resin/pine. Taste: very sweet syrupy up front with some bitterness coming in the middle ending caramel and alcohol sweet. Mouthfeel: syrupy for the style with low to medium carbonation. Overall: just too sweet for my DIPA liking. Actually almost comes across like a hopped up doppelbock. In that case not so bad! ---Rated via Beer Buddy for iPhone

Pours a translucent amber with a frothy head. Super unbalanced for an IIPA. Overly sweet trying to mask the hop bite. Let the hops shine! Sickly resiny and sticky sweet on the tongue and leaves an unpleasant aftertaste/mouthfeel.

This poured a darker orange color with a beige head. Aroma was soap, pineapple, and caramel. Flavor was bitter, with very little hop flavor and chewy sticky caramel malt. Way too sweet and malty for a DIPA. Pretty poorly done.

Aroma: This one has a big grapefruit and grass nose
Appearance: It has a cloudy golden pour, white head, mid plus lace
Flavor: This one tastes light sweet, mid-plus bitter/hoppy
Palate: Medium bodied with a creamy feel, a soft carbonation, and a dry finish
Overall Impression: I thought that this one was a solid, but not top of style DIPA. Another very solid offering from DuClaw, one of many beers from this trip that fit that description.

On tap at Duclaw in BWI. Clear amber pour with a one finger white froth. Big grassy herbals and piney resin in the nose give way to orange peel and sap in the flavor. Big caramel malt and biscuit with a sappy finish. Medium to full body for the style with fine bubbled effervescence and a sticky finish.
