Serum is our version of a Double(Imperial) India Pale Ale. It is aggressively hopped at several stages of the brewing process including a dry hopping that takes place little by little over a 2 week period. With an OG close to 19Plato, this beer is big and hoppy, yet has a strong malt backbone that keeps the huge hop bitterness from being overbearing.

Reviewed 3/8/13. 12 oz bottle into a nonic pint glass. A: Pours a cloudy dark copper color. The head is a one finger offwhite shade. Retention is pretty good given its alcohol content, and the lacing left behind is nice looking as well. S: Malty. There’s a lot of caramel, biscuit, and brown sugar in the malt backbone, weakly supported by some faint piny hops. Maybe there’s a touch of weed here as well. DuClaw’s typical yeast profile comes across less peppery and more...dare I say cardboard-like? Not sure about the age of this one, but I’m not impressed regardless. T: Hops are very faint here, except perhaps a faint bitter bite on the finish. This one is very much a malty DIPA, and a sweet one as well. At first, there are a surprising amount of plum-like qualities, which will eventually give way to a sweet caramel midtaste. It finishes with only faint piny hops, a sensation badly overpowered by heavy-handed brown sugar and orange sweetness. Good gawd, this is sweet, even cloying; and it can NOT get away with it the way Misery did. M: The body is really creamy, thick, and syrupy. As a barleywine, the texture works well - but this is a DIPA, so it’s just overbearingly difficult to sip (for the record, I don’t like most malty DIPAs). The hops cleanse the palate only enough to expose some boozy qualities, without really hiding much of the sweetness or giving the body extra drinkability. O: A poor DIPA; a passable barleywine/strong ale. I’ll be fair to it - the flavor profile screams "badly aged DIPA" to me. It’s not drainpour bad, but it’s going to take a long time to put this one down. It’s just WAY too sweet for my tastes.

Tap. Pours clear orange, minimal head or lacing. Aroma is perfume, a bit medicinal, candy? Odd. Flavor is really sweet, tangerine perhaps, lots of backing perfume, medium bitter. Medium body, flat as a board. Sticky sweet. Ewww.

Dark copper color with small off-white head and a little messy lacing. Aroma and flavor have strong bitter piney hops mixed with amber malts. A little boozy and chemical like. Okay

It pours a clear, golden color. It has aromas of floral, pine, citrus, and hints of malt. It is very hoppy with high citrus and floral flavoring. It is moderately bitter on the way down.

Caramel aroma, with pine and earthy notes. Pours a clear amber with a full white head. Caramel beginning, moves onto pine and earthy notes which fade into a lingering bitter finish. Slightly slick mouthfeel, with a full body. A very good IIPA, especially at the price.

Pours a clear rust orange. A sweet grapefruit and pine aroma. A fruity malt, citrus hops, and caramel taste. A sweet taste with little bitter hops.

I'm impressed. A bitter, hoppy double ipa that still remains smooth. Don't think you'll get away with no burn on the palate though...after all, it is 9% ---Rated via Beer Buddy for iPhone

This was poured into a tulip. The appearance was a glossy/semi-hazy burnt orange color with a slim finger’s worth white foamy head that quickly dissipated leaving some clingy messy lacing. The smell had some sweet apricot roaming over top of some light orange and lemon. Wet fresh grassy underneath rides a light caramel maltiness. The taste took all of those previously mentioned flavors to combine and leave a dry fruity aftertaste and finish. On the palate, this one sat about a medium on the body with a fairly decent sessionability about it. Carbonated nicely as a DIPA, the bitterness is there to leave an adequate harshness. Overall, I say this was a pretty good DIPA, nothing over the top, but it fits the style and I like the apricot in it.
