COMMERCIAL DESCRIPTION
Serum is our version of a Double(Imperial) India Pale Ale. It is aggressively hopped at several stages of the brewing process including a dry hopping that takes place little by little over a 2 week period. With an OG close to 19Plato, this beer is big and hoppy, yet has a strong malt backbone that keeps the huge hop bitterness from being overbearing. Available in VERY limited quantities and only at our pub locations.

Reviewed 3/8/13. 12 oz bottle into a nonic pint glass. A: Pours a cloudy dark copper color. The head is a one finger offwhite shade. Retention is pretty good given its alcohol content, and the lacing left behind is nice looking as well. S: Malty. Thereís a lot of caramel, biscuit, and brown sugar in the malt backbone, weakly supported by some faint piny hops. Maybe thereís a touch of weed here as well. DuClawís typical yeast profile comes across less peppery and more...dare I say cardboard-like? Not sure about the age of this one, but Iím not impressed regardless. T: Hops are very faint here, except perhaps a faint bitter bite on the finish. This one is very much a malty DIPA, and a sweet one as well. At first, there are a surprising amount of plum-like qualities, which will eventually give way to a sweet caramel midtaste. It finishes with only faint piny hops, a sensation badly overpowered by heavy-handed brown sugar and orange sweetness. Good gawd, this is sweet, even cloying; and it can NOT get away with it the way Misery did. M: The body is really creamy, thick, and syrupy. As a barleywine, the texture works well - but this is a DIPA, so itís just overbearingly difficult to sip (for the record, I donít like most malty DIPAs). The hops cleanse the palate only enough to expose some boozy qualities, without really hiding much of the sweetness or giving the body extra drinkability. O: A poor DIPA; a passable barleywine/strong ale. Iíll be fair to it - the flavor profile screams "badly aged DIPA" to me. Itís not drainpour bad, but itís going to take a long time to put this one down. Itís just WAY too sweet for my tastes.

Grapefruit, citrus aroma with some malt backbone. Gold appearance with a nice thick white head, good lacing. Grapefruit hop flavor with caramel malt notes. Body and carbonation are medium. draft, pours dark amber. Citrus hop aroma. Taste of citrus hops, Iím really enjoying the dry hoppy brews. Well balanced, malt backbone, hoppy flavor, not the impy taste of an imperial. More on the line of an IPA...which is fine by me. Can taste the 9%abv. slight bitter at end. Finish of grapefruit. Nice balanced beer

Bottle. Pours a dark copper color with a small off white head. Aroma is of citrus, mostly grapefruit bitterness, pine and some crackery caramel malty notes. Taste is an interesting fruity/citrusy/lightly piney hop bitterness with some lingering sweet bready malt notes, light caramel sweetness and another punch of hop bitterness before it finishes. Light notes of the ABV and an appropriately thick body. Aroma was kind of meh, but the taste more than made up for it. This was pretty tasty.

Pours clear copper with small white ring. Aroma is big pine bitterness with toffee malt. Taste is a great pine hop bitternes with toffee backing.

Bottled 02/17/14. Nose of resin and pine-dipped caramel topped with tropical leaning, but otherwise traditionally citric hops. Yummy! Pours a clear but slightly dulled orange with a soapy off-white head. Taste semi-sweet and lightly bitter (would always love more here) but very obviously and adamantly fresh and clean, fresh resinous character that still manages to stay lively. Very oily medium body with classy booze that warms before you really know what youíve got. Some residual sugars and sticky lips, malt is papery and thin but still present, gives enough to hold up the heavy high hops. this is a wonderful flashback for me to the days right before IIPAs became cloyingly sweet and sticky (which was itself the stage before our current "MOAR HOPS" period); there are some alcohol aromatic and higher order issues to be wary of here, but at slower consumption speeds, this manages to stand out from the rest of the marketplace somewhat. And reminds of early FFF.

MrBunn (2384) - The Wet Side of a Dry Town, Pennsylvania, USA - MAR 7, 2014
Bottle. Pours a fairly clear orange with a medium frothy white head. Aromas are pine and citrus with just a hint of earthy/spicy hops that seemed to pop a bit more right after pour and then they faded quite a bit. Flavor has a nice bunch of hops and a mediocre grain presence. As for the hops, they provide a nice bitter punch and a fairly good copy of the nose aromas... lots of resin and grapefruit peel. The malt body is a little flawed though... itís not awful, but it does have a kind of grain dust edge to it (like when you are in a silo or something) that is a little chewier than I would like. ABV is a nice throat-warming (but not hot) addition.

Bottle. Hazy orange, small off white head. Aroma is citrus and pine, with a funky yeast presence. The taste has a strong caramel malt note at first that gives way to extreme hop bitterness and pine. Wet, semi-sticky palate, medium carb. Overall, ok but too much of a tangy weird bite in the flavor. ---Rated via Beer Buddy for iPhone

Lots of hops, thatís for sure. But a huge grapefruit and other citrus flavor mixes with a bit of a medicine like quality.
