Biere de Miel is bottle conditioned and contains only water, barley and wheat, honey, hops and yeast. It has a marvelously delicate scent of honey, balnaced by a dry palate, resulting in a beer that is both estery and refreshing.

Disclaimer: Both the normal and the organic (biologique) version.

Aroma is of honey, straw and sweet malts. Taste is fairly bitter with some sweetness from the light malts. Finishes fairly smooth with slight bitter tang a liquor bite.

Five years old. Bottle from John’s Marketplace in Portland. I’ve been a bit "meh" with regard to beer lately -- especially with regards to bottles at home -- but this is a nice reminder of why I love the stuff.

Opening the bottle, I find 2009 printed on the cork. I bought this late December 2013. Maybe I don’t know how John’s Marketplace works, but I would have expected to see some sort of note that this was a very old bottle. On the other hand, maybe I shouldn’t bitch because (1) I would have bought it anyway and (2) at $10.95 this may be a 2009 price as well.

The beer pours straw-gold with an abundant if coarse white head. Some darker floaty material, small in size, mars the appearance. The beer is almost exactly what one would expect from the label. The aroma is Dupont yeast and a very distinct honey. Holly says "fruit punch", I don’t get it but I guess she’s reacting to the esters. Flavor is again textbook Dupont with an added sweetness (and honey essence) from the honey. Dry farmyard dust. Beyond an early hint of european hops, very little hop presence at this age, and more surprisingly almost no funk. A dry yeasty spiciness closes down the flavor profile. I like LuckyGirl’s descriptor "snickerdoodle". Little sign of the 8% but little excuse for it either -- this doesn’t come off as a big beer the way that Avec does. It is a good beer, but at least at this age is not the equal of the standard Saison Dupont.

tl;dr summary: I need to try it fresh.

Aroma and taste are mainly yeasts and a faint honey tone, along with a bitter freshness. Aftertaste’s a bit dry. As it warms, it gets more floral and fruity (I even get apple juice?). Thin bodied sadly, relatively high carbonation.

UPDATED: FEB 21, 2014 Pours a murky dark straw color, with a thick white head, but little to no lacing. Aroma is honey and hay. Taste is moderately sweet, with honey, some malt. Lower mouthfeel with a little bitterness and a lingering crisp finish.
