Great stuff. the Honey is very pronounced, but somehow balanced and not overpowering. Remarkable all around pale yellow, lots of lace, honey in the nose with some spice. delicious. Appearance: Looks suspiciously like mead.
Aroma: Wildflowers, honey, and malt.
Taste: Hominy, and non-sweet honey.
Palate: PERFECT! Smooth with a bit of spritz.
Overall: Quite refreshing and thirst-quenching. The fact that it’s 8% ABV is WELL hidden. Saison-ish. The fact that it’s a Dupont creation is not surprising given the high level of quality. Head is initially large, frothy, white, mostly lasting. Body is hazy dark yellow, bottle conditioned. Aroma is moderately malty (toasted grain, cookie), lightly hoppy (flowers, herbs), lightly yeasty (cobwebs), with notes of honey, pepper, clove, banana, pineapple, cinnamon, alcohol. Flavor is moderately sweet, lightly acidic, lightly bitter. Finish is lightly sweet, lightly acidic, moderately bitter. Medium body, velvety texture, lively carbonation, lightly alcoholic. Unbelievably sexy, literally makes me shiver with delight. The key to most Dupont beers is freshness (i.e., preferably drink during the same year as what’s on the cork), since the yeast strain(s) is/are not particularly farmy and don’t improve its character with age. This is the best sample I’ve ever had of this (the ’04 was pretty sweet), and should probably buy a case. bhensonb (3006), Woodland, California, USA May 9, 2006 Aroma of spicey malt, and perhaps honey; perhaps a bit medicinal. Hazy golden orange, but not a deal of head. Very dry, considering it has honey. Something of a herbal flavor; perhaps the honey carried a flavor with it. Nicely fizzy on the tongue, makes me want to pucker. Finish of yeast and hops? Really very good.
