This is a beer already brewed in the 1950’s by Dupont Brasseries. As Dupont has extra fermentation capacity now, Olivier has the luxury of crafting some new brews, or re-creating some old specialties.There were two test versions of Monk’s Stout, both at 5.2% abv. One was dry and roasty, and another is said to be a little more rounded. Monk’s Stout is available in 33cl bottles and 20 liter kegs in Belgium.

750 ml bottle. Pours black with a tan head. Nose is a bit musty with no malty nose you would expect from a stout. Taste is not a stout, not a sour. A faint hint of Flemish brown. Thin body. Not sure what they’re trying to do here.

Robe brune, belle mousse crémeuse. Nez agréable sur le café au lait, le chocolat, sur un fond épicé et fumé. Bouche à l’attaque crémeuse, belle note chocolatée, équilibre, finesse et élégance, Un stout de plaisir.

Bottle shared. Black with fizzy greyish beige head. Ash, burnt toast, mineral, light dry malts, some sour red berries. Light sour and medium roasted bitterness. Under medium bodied with very dry feel and a bit fizzy carbonation.

Negra, espuma ocre muy abundante. Aroma marcado a café, con notas dulces. En boca es ligera de cuerpo y con gas abundante. Algo aguada. Sabor tostado, con predominio de café y caramelo.

Bottle at home. Black with tan head. Sweet roasted malts, ground coffee, pure cocoa, licorice, melasse. Moderate sweet with moderate bitter, hint of salt, tart in its tail. Medium to full body. Dry burnt ashy finish, chocolatey aftertaste. Overall a bit watery and thin.

Bottle 33cl. Dark, black, little see through with red glow. Big, beige top. Metallic aroma, malts, hops. The taste is fresh, intense bitterness. Not expecting this from stout. The taste is also somewhat metallic.

Bottle at home. Pours black in colour with a tan head. The aroma is slightly lactic with a rich roast aroma. Slightly sweet to start with some bitterness: perhaps not enough. Flavours of more roast malt and cocoa, and that slight lactic acidity again. Mouthfeel is somewhat thin. OK. I would have another as I think the lactic tones are interesting.

Nice surprise. Quite complex for such a low ABV. Interesting changing roast level, dark choco, some smoke presence, dried fruits, dark fruits, bit berry like. Light sweetness with moderate bitterness and light tartness. Feels well balanced. Ofc not impressive as RIS, but for its own style very OK

VT (2527) - Quebec City, Quebec, CANADA - DEC 17, 2015
330 ml bottle at Festibière de Québec 2015. A brownish black with short lived beige head. Aroma is chocolate, ash and burnt bread. Flavor is chocolate, coffee and belgian yeast. Finish is, surprisingly, somewhat tart, with a chocolaty bitterness. Lingering coffee. Medium body, average carbonation.
