COMMERCIAL DESCRIPTION
This is a beer already brewed in the 1950’s by Dupont Brasseries. As Dupont has extra fermentation capacity now, Olivier has the luxury of crafting some new brews, or re-creating some old specialties.There were two test versions of Monk’s Stout, both at 5.2% abv. One was dry and roasty, and another is said to be a little more rounded. Monk’s Stout is available in 33cl bottles and 20 liter kegs in Belgium.

Bottle. Brown-black pour with tan head. Aroma is roasty, intense belgian yeast spiciness, vanilla, fish oil. Taste is roasty, phenolic, light roasty acridness, acidic. Palate is thin, a bit watery, thin carbonation. Blehhh, like a bad belgian stout.

Tap at North Bar, Leeds. Clear, cola colour. Tidy, lasting, off white head. Roasted coffee beans. Dry cocoa. Light tang. Taste is dry, with a light, roast bitterness. Hint of cacao sweetness. Dry, superlight bitter finish.

750 ml bottle into tulip glass, bottled on 5/27/2013. Pours fairly pitch black color with a 2-3 finger fairly dense and fluffy tan head with fantastic retention, that reduces to a nice cap that lasts. Dense foamy lacing clings on the glass, with a large amount of streaming carbonation retaining the head. Aromas of dark chocolate, cocoa, roasted malt, coffee, toast, dark bread, raisin, pear, apple, clove, pepper, herbal, and roast/yeast earthiness. Nice aromas with good balance and complexity of dark/roasted malt and fruity/spicy yeast ester notes; with good strength. Taste of dark chocolate, cocoa, roasted malt, coffee, toast, dark bread, raisin, pear, apple, clove, pepper, herbal, and roast/yeast earthiness. Slight amount of earthy roasted bitterness on the finish; with lingering notes of chocolate, cocoa, roast, coffee, toast, dark bread, raisin, pear, apple, clove, pepper, herbal, and yeast earthiness on the finish for a good bit. Nice complexity and robustness of dark/roasted malt and fruity/spicy yeast flavors; with a good malt/yeast flavor balance and zero cloying flavors after the finish. Medium-high carbonation and medium bodied; with a smooth, crisp, and lightly chalky/bready mouthfeel that is good. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a good Belgian stout. Good balance and complexity of dark/roasted malt and fruity/spicy yeast flavors; and very smooth and crisp to drink. A unique and pleasantly enjoyable offering.

Thin for a stout. Not bad, just thin. Hits some of the flavours of a stout but very weak. Now one of Dupont’s best. Bitter sweet chocolate, biscuit and maybe brown sugar. I expected more when I saw it on the shelf..but blah

Appearance: pours pitch black with a big, light tan, quickly dropping head, leaving nice lacing.
Aroma: coffee and roasted malts with some fruit-like, fresh aroma in the back and perhaps some forest notes. Subtle, yet very pleasant.
Taste: a bit sour, malty. There’s a lot of roastiness and hint of coffee. Mildly bitter. Basically a typical stout with nothing much going on.
Mouthfeel: medium bodied, medium carbonation. Would be better with softer carbonation.
Overall: Highly drinkable, but I wouldn’t drink more than one bottle. it’s a typical stout. It could be more bitter and less carbonated. Good, but not great.

big head that soon leaves a massive coffee roasty, chocolate, toast, waft is very black in colour with no light coming through! lively, creamy, oily feel, full body, with a long bitter after taste very nice indeed.

Bottle 330 ml at home, into a snifter. ABV 5.2% Totally black pour with two fingers of beige head, thick, with great retention.. Heavy lacing left on the glass. Aroma of light roasted malts, milky chocolate, hops too. Taste of roasted malts, chocolate, fruity as well, pears, hops. Very bitter aftertaste. Medium body, fizzy carbonation. Dry on the palate. Overall: Very good, I was expecting a generic stout but this turned out to be much more.
