Commercial Description:
In 1991, the brewery decided to revive an old custom harking back to the 14th century when there were no means of refrigeration. Beer was then traditionally brewed in early December and stored over the winter under naturally cool conditions. The first barrels were only opened in March, as the days started to become warmer. It has a fresh, springlike bouquet with dominant tones of malt and grains. It is made using a top fermentation yeast, malted barley and newly harvested Alsation hops. With 5.4% alcohol by volume, it is a pure malt beer that is highly refreshing. It has a fine white head and clear golden colour, a dominant hoppy taste with a hint of fruitiness. Best served between 5 and 6°C.

750 ml corked and caged. Very pale blonde colour with a thick pillowy white head. The aroma is mostly of pale malt, cereal and a very soft earthy character. There is a hint of floral hoppiness as well. The aroma is very lager-ish but the flavour shows some more character. Soft pale malt with a touch of honey and light straw/earthiness. A soft minerally bitterness with a hint of earthy flavour. Soft textured and quite drinkable. This beer grew on me quite a bit after a lacklustre first impression.

poured into tulip. pours a clear golden yellow with mild white fluffy head. sour yeastie mild fruit aroma. flat palate with semi fruit. wild yeast presence and fruity complexity behind it. a dry mouthfeel, no front middle to finish, just all together. complexity comes with warmth.

Bottle sampled. Pours golden with a decent size fizzy white head. Aroma of spices, grain, floral hops, and citrus. The flavor is sweet upfront, with some fruit, citrus, grain, and floral notes. The finish is bitter, decent body, good brew.

Gold color with large white head. Have to agree with Joe on the biscuit and honey nose. Sweet sweet body with a light grainy malt and crisp honey finish with a faint hop character.

Pours a crystal clear pils-like golden, with a huge rockywhite head. Holy biscuits and honey. Very grainy nose with some ripe fruit and earthy notes. High carbonation with a lot of the characteristics from the nose following through. A light citrus hoppiness carries the earthy sweet biscuity malt to a very long and dry finish. Quite tasty.

From the bottle this pours a clear golden body with a creamy head that pastes lacing to the side of the glass. The aroma is honey sweet grainy malt with a light stone fruitiness and some fresh cut grasses. In the flavor the malts take on a nutty, bready sweetness, the fruit fades, and the grassy bitterness grows throughout the session. Nothing fantastic, but quite drinkable.

Bottle. High white fluffy but lasting head. Clear golden body. Powerful sweet and yet hoppy barley malt aroma. Sweet and a waterey barley malt flavor without the expected hops bitterness. Low carbonation Long sweet aftertaste.
