Commercial Description:
In 1991, the brewery decided to revive an old custom harking back to the 14th century when there were no means of refrigeration. Beer was then traditionally brewed in early December and stored over the winter under naturally cool conditions. The first barrels were only opened in March, as the days started to become warmer. It has a fresh, springlike bouquet with dominant tones of malt and grains. It is made using a top fermentation yeast, malted barley and newly harvested Alsation hops. With 5.4% alcohol by volume, it is a pure malt beer that is highly refreshing. It has a fine white head and clear golden colour, a dominant hoppy taste with a hint of fruitiness. Best served between 5 and 6°C.

330 ml bottle - pours clear pale gold with a medium withe head that my tulip glass hold nicely. Leaves good amount of sticky lacing on the sides of the glass. Aroma verry grassy and grainy, along with some white wine, apricot, and a certain heathery mustiness that I can’t quite place, but is very enticing. Flavour is quite sweet, with light honey tones and, as thers have noted, a notable herbal quality. The beer has an excellent mouthfeel, light and perfectly carbonated (which is to say, not too much, not too little) and finishes very crisp and dry. I haven’t had any bieres de garde before, but I look forward to trying more, perhaps better examples of the style.

Bottle from the LCBO. Clear bright golden with a large white head that quickly recedes. Aroma is sweet and herbal, with notes of lavender, honey and grassy hops. Medium body that is crisp at first, but gets a bit sticky as it warms. Flavour is quite sweet off the top, with honey and clover notes, and herbal and slightly spicy hops in the finish. A bit simple and a touch too sweet, but still pleasant.

Bottle. Clear golden with a medium frothy head. Aroma is crisp cereals, herbs, hops, flowers and incense. Flavor is sweet malt, hops and herbs. Fizzy carbonation with a medium body.

Nice golden brew with a medium lingering head. (Love the label by the way) Some fruit hints in the aroma and flavour, but the overriding impression is one of grassy maltiness. Very pleasant too. Good slight lingering aftertaste and very refreshing. What this has to do with "springtime" is beyond me, but a nice beer nonetheless.

330 ml bottle from LCBO served at cellar temperature in a tulip glass.

App.: Clear (!!) golden, vanishing white head. Aroma: Floral perfume, incense (yes, incense), light apricot/apple fruits, light, ambiguous spices, a hint of funk and dark bitter green herbs. Palate: Medium-ish body, medium carbonation. Flav.: A big hit of cardboard that covers grain/cereal, light fruitiness, bread (without the yeast...wow); a somewhat unpleasant bitterness and a touch of sweetness, finishes clean.

More like an Eastern European pale lager with a bit of attitude. Would have been nice to bring more of the nose into the flavour.

330ml bottle, 5.4% a/v Pours a light gold with a pleasent white head. Little carbonation visible. The smell is cereal and some floral notes. The beer tastes somewhat grainy, a bit fruity and a little bit of booziness on the end note. Overall a fairly average beer, but a good one nonetheless.

Probably the blandest biere de garde I’ve ever had. Grainy, slightly-sweetish nose. A little too carbonated and way too clear. Not enough spice notes for my liking. More like a high-ish alcohol cream ale.

12oz bottle purchased from LCBO. Pours a boring pale straw. Little head that dissipates quickly. Little aroma. First taste is relatively bland but with a bit of fruitiness, with carbonation sparkle as it goes down the throat and a hint of apple in the aftertaste. No spices detected. The flavour got marginally more interesting as it warmed, but not by much.
