Commercial Description:
In 1991, the brewery decided to revive an old custom harking back to the 14th century when there were no means of refrigeration. Beer was then traditionally brewed in early December and stored over the winter under naturally cool conditions. The first barrels were only opened in March, as the days started to become warmer. It has a fresh, springlike bouquet with dominant tones of malt and grains. It is made using a top fermentation yeast, malted barley and newly harvested Alsation hops. With 5.4% alcohol by volume, it is a pure malt beer that is highly refreshing. It has a fine white head and clear golden colour, a dominant hoppy taste with a hint of fruitiness. Best served between 5 and 6°C.

330 mL bottle. Orange with almost no head. Very grassy-malty aroma. The flavour is malty-spicy-fruity. Tastes like pilsner crossed with orange cool-aid. Little bitterness. Fairly dry. Medium body. Nothing special.

330ml bottle filed dec.14/ 07 Pours a crystal clear gold with a white 1 finger cap that reduces quickly but laces well. Aromas are malty-grainy, light whiff of lemon grass from the Alsation hops. Grainy-sweetness up front gets balanced by some herbal-resinous hopping...lightly drying finish....very flavorful but simple...like a good well crafted and carried-off lager...something hard to do with an ale...but this is a prime example of uncomplicated simplicity and skill producing a very tasty, satisfying, serviceable ale

330 ml bottle. pours pale yellow with a nice white head that leaves some lacing and lingers on the surface. malt aromas, sweet with some graininess. no noticable hops in the aroma. flavours are light sweet straw, with lots of grain coming through in the middle. very dry finish. im actually starting to really like this one as i sit here drinking it. very drinkable and would be very enjoyable in the summer. ill have to get back to the LCBO and invest in some more.

Bottle from the LCBO- Pours sparkling gold with a good lacing white fizz. Floral botanicals in the nose, lemon, rose petals, some grains and sugary pale malts with grass and hay. A good lemony discernment smacks the mouth and adds biscuit, rose petal, rosemary, grassy, floral bitterness. This is dry, with a touch of sweetness in the finish, and an added lingering bitterness. Uhhh why can’t this replace all the welfare lagers at the LCBO?

Pours a golden yellow with a spotty white head. Lots of straw, wet hay, hops and some "funk" as JesseM put it. The flavour is a pretty good reflection of the aroma, but with a strange but pleasant sour finish. All and all a unique and tasty brew.

330ml bottle from the LCBO (packaged completely differently, 100% different label, the one in the picture is astronomically cooler looking). Pours a really nice gold colour, bright and sparkling, with a small surface film. It looks identical to champagne. Aroma: Grassy hops big time, some weird funk, sweet fruity malts, esters. Flavour: Wow, is that ever, odd, but delicious in its oddness. Loads of the funk, hard to describe, but it has basically all the flavours I tend to absolutely love in beer, which is for some reason difficult to describe in words, but everything from the aroma is there. Barnyard, wet hay, straw (a little), almost like a fruit basket with the fruity esters coming in. The aftertaste is like some sort of malty toffee candy. It has a great creamy mouth-feel to it as well. Wow, I’ve never had anything like this before, but this beer is totally fantastic IMHO. I will definitely buy more. Also, the more I drink it, the more evident the grassy pilsener-like hops become.
