Formerly known as Sebourg beer, this was rebaptized Saint Druon de Sebourg in 2000.
Malted barley and 3 varieties of hops grown in Alsace form the basis of this recipe, which, unlike Duyck’s other beers, also contains wheat from the Beauce region of France, milled in the traditional way by Sebourg’s miller. And to give it an even more distinctive flavour, the Duyck’s use a specific strain of yeast exclusive to the beer.
St. Druon de Sebourg is the French version of a blonde abbey ale, similar in style to those found across the nearby border in Belgium. It is spicy and effervescent, and much hoppier than typical bière de garde.

Light grassy aroma, with sweet, honeyish malt. Brassy gold color with a decent white head. There is some very light lacing. Thin bodied. Thin fruit flavors, a bit of sour. Light yeasty spice notes. The finish is dry, and there is a bit of bitter! Reasonably flavorful. Grows on one.

Bottle (aged about one year) in NYC with Chris. Pours a slightly hazy gold with a fine, white head. Aroma is doughy bread, subtle spice, light tartness (which doesn’t come through in the flavor, thankfully) and some aged malts. Flavor is sweet, more bread, light yeast and spice, a bit of caramel and honey. Medium bodied with fine to average carbonation. Sweet finish, bit of bread, caramel, honey. There is some age coming through but it works alright. Faint sharpness, but only faint. Overall very enjoyable.

Bottle. Poured hazy orange color with a large frothy white head that was mostly lasting with good lacing. Moderate sour citrus and spice aroma. Light to medium body with soft carbonation. Medium fruity sweet flavor with a medium bitter finish of moderate duration. Refreshing drinkable beer.

Bottle, corked. 6% ABV. Blonde, hazy, foamy head. Flowery citric aroma with a touch of honey. Malty sweetish, citric, slightly perfumed and flowery flavor. Just a tad thin. Honey. Likeable bière de garde.

750 ml green corked and caged bottle poured a lightly hazy golden yellow with a lasting creamy white head. Aromas of straw, fruittiness, lighjt spice and a hint of yeast. Palate was light to medium bodied and crisp. Flavors of straw, apple, pear and light spice with a crisp lingering lightly sweet finish.

Bottle. Pours hazy dark yellow with a small, frothy, white head, somewhat lasting with spare lacing. Aroma is heavy malt (bread, meal, straw), light hop (flowers, grass), heavy yeast (dough, horse blanket) with notes of banana, pepper, and butter. Medium bodied, creamy texture, average carbonation, and a chalky finish. Average duration, light sweetness, acidity, and bitterness.
