COMMERCIAL DESCRIPTION The Ross family grows Red and Golden Delicious, McIntosh, and Spartan apples, blending the juices before fermentation. A little fresh juice goes back in at the end to enhance aromas and flavours. Ross Hard Apple Cider is uniquely Canadian, made not in the English tradition but the East Kelowna tradition in the making. It's all very much a hands-on, cottage-industry operation: apples are crushed by hand; pulp is bagged in nylon sacks that are placed in six ordinary household washing machines. Two minutes on the spin cycle separates juice from residue. Juice is settled and cleared and then fermentation begins.
