Je vais sans doute surprendre beaucoup de mes lecteurs habituels, en vous parlant favorablement d’une bière ambrée, mais cela arrive forcément un jour. En Belgique, il y a toujours une bière pour vous surprendre quand vous ne l’attendez pas !!! Quintine ambrée. Tout compte fait, cela ne lui va pas mal, puisque l’emblème de la brasserie des collines est une sorcière de ce pays des légendes. Et tout le monde voit bien, je suppose, une sorcière avec des cheveux roux... Cette bière ambre profond tire en effet un peu sur le roux en transparence. Le pétillant est superbe par centaines de bulles partout, alors que mon exemplaire était à date limite en mai 2012. Très joli. La clarté est nette. La mousse est beige et crémeuse, superbe. Elle tiendra la longueur sans faillir... Les arômes sont de pomme de terre, pruneau, figue, amande … et noix (assez rare). La texture est très soyeuse. La prise de bouche est très belle sur la céréale avec une pointe de piment, et du bois de fût. Superbe. Le 2ème goût est un bel équilibre malt / levure / houblon délicat. Le 3ème est un superbe fondu des saveurs où se mêle déjà la chaleur de l’alcool (8,5) La longueur est sur un goût bien typé, où le malt transparaît. La levure est douce avec un boisé léger, elle correspond bien à une ambrée. L’alcool est bien proportionné et progressif. La finale est tout en rondeur et vraiment agréable. Cette bière confirme la bonne position de la brasserie dans les bières régionales, celle-ci, en plus du caractère, a vraiment un grand bouquet de saveurs. Remarque importante : ne pas hésiter du tout à servir cette bière à température ambiante. Vous m’en reparlerez, et surtout vous trouverez sa vraie saveur. Grand moment. (sauf bien sûr le flip top -ridicule- et la couleur, qui me laisse toujours indifférent, mais disons que la saveur a clairement effacé tout cela...) Vive la sorcière rousse...

This beer hits all the right notes. Beautiful color, aroma and taste. perfectly smooth and readily drinkable. Enjoying this on a cool fall rainy day. It fits the environment perfectly....

UPDATED: OCT 2, 2013 33 cl. swing-top bottle @ home. Procured from Carrefour. BBF 07/2015. This bottle costs more than a bottle of Rochefort 10 at the supermarket where I picked it up, feels wrong somehow. Maybe swing-top bottles are more expensive? Very hazy, slightly murky orange peel amber, small creamy white head, more lacing than head. Nose is nicely hoppy, floral, zesty, raw hay, slight caramel, orange peel, spicy floral yeast, rustic, farm qualities with some grapefruit, very nice. Taste is bitter floral, rustic, barnyard, thick BE yeast, orange peel, bitter spices, touch caramel, slight candy sugar, zest, lemon peel, grapefruit lingering bitter grass finish,.. Creamy caramel malts, very dry & nice carb. Feels quite saison-like to me. Mmm excellent brew, great stuff here. ////// Shared some of the bottle & the feedback was equally positive so it wasn’t only me.

Maaaaaalty. Cloudy tea color. Head very sticky, lasted a while. Was a two-color head, partially white, partially more cream colored. Malty nose, kinda spicy. Flavor again quite sweet. Very malty, similar to chowing on malted milk balls. Has toffee and caramel as it warms, with candy sugar noticeable. Zippy and fizzy, makes the ol’ tongue tingle. A good example of a darker Belgian ale.

Sampled 5 month too old: Dark brown, large soft head. A real fine sweet maltyness, nicely balanced with bitterness from the hops. Perhaps a little bit too bitter. Great beer! Rebuy!

hazy amber colour, moderate yellowish off-white head; aroma of dried fruits (raisin, figs), apple, some caramel, honey and hints of alcohol; taste is the same - excellent Belgian strong ale

UPDATED: JUN 18, 2008 Bottle... This beer rocks!... Murky, golden ale. Medium-sized, off-white head. The aroma dispenses heavy notes of pear and apple cider; lesser notes of caramel and fruity wine. The flavor is of pear and caramel up front; very astringent and well-balanced on the backside. Full-bodied with a dry, fizzy mouthfeel. Short, dry, lightly-bitter finish. World Class Brew!

UPDATED: DEC 22, 2007 (rated 21.07.05) Drinking this beer is the equivalent to cozying up to a warm fire in a British winter. Nice amber color, though the abundant yummies swimming about make it look a bit dingey. Rich, deep aroma that smacks of spiced rum. Undeniably strong smell of alcohol - not for the faint hearted. Pour this thick juice down slowly and let the flavours release all over your thirsty tongue. A spicy mixture of maple syrup, brown sugar, raisin and oddly, grapefruit. It stays with you for some time - definitely a slow drinker. A naughty pleasure.

Bottle at t’Spinnekopke. Delicious blended beer! Some jams, fruit, with refreshing hops too. Tongue-coating and full. Good depth. Nice tinge of sourness, with some sugar. Amber.
