On October 26, 1610, a pyre was erected in Ellezelles for a 38-year-old Quintine witch. In his grimoire, being passed from generation to generation, we found his "magic" recipes and we share with you today.

Belle robe blonde, mousse abondante. Amertume moyenne. Peut faire penser ŕ une Moinette ou une Chouffe IPA. Vaut le détour.

330ml flip-top bottle bought at Belgian Beer International in Tsuen Wan.

Looks: Cloudy hazy dull golden orange with lots of dirt-like yeast sediments; One finger head crumpety white foams which lasts for 3 minutes. Very good sticky lacing and notable small carbonation.

Aroma: Fragrant and creamy with tangerine, light grapefruit, caramel, vanilla, light plums, raisins, light sugar, strong Bel yeast, malt and light herbs.

Taste: Mid to light sweet taste of Ale malt, with light grapefruit, orange, light molasses, resin, dry biscuits, Bel yeast, light spices, lime, grass, and sharp bitter hops.

Body: Mid to light. Dry, creamy and oozy palate.

Mouth Feel: A rather modest Belgian IPA - body is close to full, quite creamy, good Ale maltyness, moderate sweetness, and lots of dry-hopping for a solid neat grapefruit, light orange, resin and bitter hoppy taste. Not big but pretty neat.

Hoppiness: Good tangerine, light grapefruit and herbal nose. Light citrus, orange, ooze, light spice, lime and grass taste. IPA-like sharp bitterness, strong but not too intense, for a lasting and astringent long finish. Good!

After Taste: Dry, biscuity and nice bitter to mouth.

Comments: This is a moderate Belgian IPA in terms of aroma, taste, and palate. Not as expressive as De Dolle Arabier or Chouffe Houblon Tripel IPA, yet its simple and nice tangerine and resiny hoppy characters are nice enough to please. A neat one, but a bit overpriced, though.

Bottle@cafe frape. Yellow haze. One finger. Floral elderberries. Medium to heavy body. Some noble bitterness. Super brew.

A golden beer with a white and medium head. The nose is aromatic, fruits, bananas, flowers, honey, sweet mandarin and some wheat. Taste of fruits, wheat, bananas, some flowers and only hint of spices. Presence of alcohol can be noticed but not to taste. Bananas after pouring the yeast. Medium bodied, quite fresh and aromatic. Actually, quite nice beer, easy but still tastefull with rich of nuancees.

3oz pour at Max’s Belgian Fest 2014. Pours a clear gold with some wispy, white head. Nose is sweet, grass, orange, honey. Flavor is sweet, grassy, pithy, soap, herbal. Clean finish.

Completely hazy blonde with a with head that winds up being left in the glass when the "beer" is gone. Awesome. This beer would be mediocre but its Belgian so it kicks some. It has that open-aire biscuit aroma but this is subdued and gives way to a mildly sweet danky malt character and a lively body with a mellow palate. Bland, bittersweet malt and Belgian yeast are the 2 icings on the cake here. I’m enjoyiny this more than I should and I don’t know why. Maybe its lively palate and lack of sweetness truely make it one of the better beers in the world. Enjoyed at Frite Belgium on Tap in Wan Chai.

Goldgelbe leicht trübe Farbe, geringer Schaum, wenig CO2. Geruch blumig, hefig würzig. Geschmack leicht hefig säuerlich. Würzig mild, fruchtig. Angenehm zu trinken!

Bottled in Frape. Color is warm hazelnut brown colour, thin foamy head. Sweet nose. Aroma is fruity walnut. Flavour is the same with yeasty tones. Alcohol stings through (8%!). finishes with long sour yeasty taste. Nicely composed beer.

Hazy dark blond with solid head. Aroma is yeasty, grassy. Flavour is quite tart with some orangey citrus notes and peppery yeast. Quite a strong bitter, aftertaste.
