On October 26, 1610, a pyre was erected in Ellezelles for a 38-year-old Quintine witch. In his grimoire, being passed from generation to generation, we found his "magic" recipes and we share with you today.

Aroma: Fruity and creamy;
Taste: Mellow, robust taste with a pronounced hop presence.

This is a two year old bottle. This golden ale has a long lasting lacy belgian head (wish my wife did as well). There is quite a bit of sediment at the bottom of the glass. The aroma reveals sweetness, malty, doughy and clean. It is very balanced in terms of bitterness and sweetness. There is an overiding dry phenolic-almost solvent like finish. It is not a brewing so much as a yeast induced quality which might make this an isolated incident (this bottle). Overall it is a tasty brew but needs refinement.

Bottle. Pours a hazy golden beer with a big white head on top. Aroma is very yeasty, fruity, bready and Belgian. Flavor is moderately sweet, some boozy notes, loads of fruity yeast and has a light, thick mouthfeel because of the low carbonation and the yeast. Slightly fizzy mouthfeel though, hard to describe but quite an average BSA in my book.

330ml bottle, present from Belgian father-in-law. Pours hazy blonde with nice foamy head. Lovely creamy blonde flavours with a balanced vanilla / tropical fruit sweetness. Eminently drinkable with a real palette-grabbing blonde character.

From bottle at Poechenellekelder 15.02.15. Slightly cloudy golden. Foamy and persistent white head and lacing. Fruity qnd refreshing aroma with some citrus, spices and tropical fruits. Similar, and slightly sour, taste. Complex and well-balanced.

33cl bottle at Van Zanten. Pale yellow with a full white soapy head. Medium to full body with moderate carbonation. Nice sweetness with some bitter elements. Citrus, peach, spices, caramel and herbs. Quite a nice Belgian brew.

0,33L bottle (from Wine of Galilee), BB 2016. Pours hazy golden with white head. The head stays. Aroma is sweet, fresh fruits, citrus, yeast, spices. Flavor is sweet and bitter fresh fruits, citrus, yeast, spices, malt. Finish is yeasty-fruity and dry bitter. Overall: very nice brew.
