On October 26, 1610, a pyre was erected in Ellezelles for a 38-year-old Quintine witch. In his grimoire, being passed from generation to generation, we found his "magic" recipes and we share with you today.

This is a two year old bottle. This golden ale has a long lasting lacy belgian head (wish my wife did as well). There is quite a bit of sediment at the bottom of the glass. The aroma reveals sweetness, malty, doughy and clean. It is very balanced in terms of bitterness and sweetness. There is an overiding dry phenolic-almost solvent like finish. It is not a brewing so much as a yeast induced quality which might make this an isolated incident (this bottle). Overall it is a tasty brew but needs refinement.

Pours a hazy golden yellow from the bottle with fluffy white head that leaves good lace. Aroma of spicy yeast esters with notes of light fruit and malty sweetness. Taste follows, booze well hidden and a bit of hop bitterness. Really well balanced, pleasant.

Bottle. Pours clear golden with big white head. Aroma is spicy with apricot, grapes notes. In taste fruity with spicy finish. Medium body, high carbonation, bit of alcohol in the bitter finish.

Bottle @ Thomas W. thanks. Lasting off white head. Very clowdy golden color. A really heavy phenolic aroma. Big spicy and a bit tart / harsh taste.

La Quintine Blonde est une bière belge brassée artisanalement dans la région Wallone par la Brasserie des Légendes. Produit régional par excellence, cette bière blonde refermentée en bouteille n'est ni filtrée, ni pasteurisée, ni centrifugée et présente donc un trouble naturel une fois servie dans le verre. Le nom de la bière " QUINTINE " fait référence au folklore du village d’Ellezelles, où est brassée cette bière. « Quintine » est en effet le nom donné à une sorcière du village. Cette bière, à la robe d'un jaune or troublé, se couvre d'un chapeau de mousse crémeux à la belle abondance. Celui-ci est traversé par une effervescence conséquente. La Quintine Blonde développe dans le nez des arômes fruités et fleuris de houblon. Ces arômes sont suivis de senteurs évoquant les levures. On découvre sur le palais une entrée douce et maltée qui laisse rapidement place au houblon perçu dans le nez. Des saveurs fruitées et fleuries de houblon apparaissent ensuite rapidement et annoncent l'arrivée en bouche d'une amertume franche. L'alcool est en parfaite harmonie avec le reste, à tel point que l'on oublie vite les 8° que contient la bouteille.

Lett tåkete gylden brun med høyt kremete hvitt skum. Lite lukt, floralsk, loff og honning. Middels fylde. Floralsk også i smak, middels bitterhet fra midten og ut.

Jan. ’16. A 0.33 l bottle at Craft Room, Zagreb. Thanks Marko! It poured hazy golden body with medium sized head. Light, watery aroma, although pleasant with coriander, yeast and lemon acidity. Sweetish flavor, vanilla, coriander, grainy, chalky and fruity with that acidity persisting to the finish where it turned to obvious herbal bitter hop notes. Thin to medium body, alcohol was extremely well hidden in it. Okay, enjoyable, but not really something to be proud for in the style.

Une très belle blonde qui s’exprime avec plein d’élégance sur des notes de fleurs blanches et de pêche de vigne. Subtile amertume finale. Je recommande pour l’apéritif.
