Mortis will enwrap you in autumn coils of tartness and decay, with ripe Fuyu persimmons bringing the slightest blush to a pale ale fermented entirely with brettanomyces bruxellensis. German and Northwest wheat, pale and acidulated barley malt and a touch of C-45 Crystal combine with Fuggles hops to wrap things up dry, tight and tart, refreshing and satisfying. Mortis has set in just in time for Thanksgiving.

On tap at St. Augustine's. Clear yellow gold, minimal cap. Aroma is fruity, melon, ritz crackers, slight funk. Taste is sweet and very mild tartness. Mild carbonation and dryness. Wet.

12 oz. on tap at Maxís. Surprisingly clear, golden orange with a lasting film of cream. Nose is wheat, light funk, honey and spice. Tastes of honey, white pepper, white wine, a bit of banana and earthy spice. Medium body is smooth with medium carbonation and a nice balance, but not much sour.

Lasting thin white foamy head atop a clouded amber body. Nose of lemon zest, honeydew. Very yeasty and tart, nice citrus front with a smooth vanilla mid palate. Finishes mildy bitter and dry.

Sample pour at a festival. Pours hazy gold with fizzy white head. Aroma is sour fruit, cereal malts, lemon zest, floral notes, light sugar, and faint oak. Flavor is malty with light sour esters, light floral hops, and faint toast; dry finish. Light/medium body and medium carbonation.

UPDATED: AUG 12, 2014 Slightly dull dark tan, has some sweetness up front, light fruit late. Just the faintest hint of tartness. I guess I donít understand what Iím drinking, not being familiar with persimmon.

Bottle. Pours a mostly clear dark golden color with a ginormous white head on it. Nose is a little sour, with the unmistakably earthy notes of the brett. Taste is only moderately sour, and decidedly fruity, with an almost brandy-like finish. Not a bad beer.

hazy tangerine, puffy large bubbled white head dies quick. Meaty peach and heavy sawdust nose, reminiscent of rust, celery, and a lumber aisle with sourness interspersed but no part of the profile. Heavy pie crust and alcohol front, tons of effervescent sweetness with light grape sourness emerging mid amidst dough and papery bitterness that continues until the muted, coin metallic finish. Too effervescent, carbonation dominating most aspects and almost no sour through the disappointing end.

Bottle. Pours golden yellow with a thin white head. Aroma was funky & sour with yeast, bread and light fruit. Flavor was earthy with bread dough, wild yeast, pale malts and had some sour funkiness.
