Mortis will enwrap you in autumn coils of tartness and decay, with ripe Fuyu persimmons bringing the slightest blush to a pale ale fermented entirely with brettanomyces bruxellensis. German and Northwest wheat, pale and acidulated barley malt and a touch of C-45 Crystal combine with Fuggles hops to wrap things up dry, tight and tart, refreshing and satisfying. Mortis has set in just in time for Thanksgiving.

THOUGHTS: Definitely sour, but not entirely in a good way at first. The sourness became more pleasant quickly, but was less dominant. Seemed sour with out any funk, leading me to believe most of the sour came from the persimmon and that over time this might become a much more interesting beer. TECHNICAL: Bottle. Poured a sparkling, golden yellow with an average, off-white head that mostly diminished and left virtually no lacing. The aroma had light white bread, pale malt and cracker; slight funky yeast; vegetable; and sour fruit. The initial flavor was lightly sweet; while the finish was moderately sweet, moderate to heavily sour and light to moderately bitter. There was pale malt, white bread, fruits, sour fruit, vegetable, some bitter some vegetal, dusty and every so slightly funky yeast. The light to medium body was a little oily with fizzy carbonation and a dry finish.

From tap. Pours hazy yellow with a white collapsing head. Aroma is fruity and light spiced. Mild phenolic, caramelish and light bitter. Vague herbaland light phenolic into the finish. Toasted malty and light phenolic finish.

Sampled during VCBW 2013 at the River Rock Casino Resort in Richmond, BC pours a clear golden color with a small white head that leaves some thin spotted lacing on the glass. Aroma is lemon with some yeasty notes. Taste is a light lemony sourness with a fruity and malty sweetness and a dry yeasty finish. Quite good for what it is and recommended.

bottle at mondial de la bière, mtl. slightly hazy pale yellow with a nice frothy white head, good retention and lacing. plain pale cereals, apples, apple juice, light vinous notes, some zest, booze and a hint of sweetness. light tart grapes for a shy acidic profile, saison yeast - spicy and peppery. average carbonation, medium body - oily, short herbal-grassy-citrusy finish. meh.

Surprising how sour this beer isn’t. The aroma is light fruit, slight sour, vinegar. Slightly hazy yellow in ciolor, white head. The flavor is light tart fruit, pear like, earthy, decent. The finish is sour, acidic, pine needles, lingering sweet fruit. Medium in body. Not bad at all, but sourheads really won’t dig this. Sweet and slighlty sour.

pours almost clear golden tangerine orange with a smallish head, not much lacing, ringed retention, a few slow streams. Sour persimmon, apricot, and a hint of citrus on the nose. Attack: fizzy/crisp, 4/10-sweetness Mid-palate: yeasty-wheatiness, persimmon, light apricot, sharp sourness Finish: dry persimmon flesh bitterness, lingering dryness. A beer with a unique flavour profile. I don’t love it, so it’s not worth recommending or drinking again.
