On tap at Tangle Town, pours a cloudy golden yellow with a small white head. Aroma of light spices, light tartness and some wheat notes. Flavour of wheat, light sourness, and some mild brett presence. Quite light and not very sour – the persimmon is not very prominent. Decent, but nothing special.

On tap at Elysian Brewing Company. Pours a hazed, golden-orange colored body with a finger-width, frothy, off-white head that dissipates slowly and leaves a moderate lacing. Aroma is fairly wheaty and a bit doughy with a good amount of tropical fruits. A light brett funk, sourness, and herbal yeastiness. Flavor is similar. Doughy wheats with a good amount of tropical fruits and a light funk. Finishes a bit sour and dry with an herbal yeastiness and a light bitterness with a good amount of fruits and wheat. Lengthy aftertaste following a somewhat creamy, medium body and a soft, moderate carbonation. Overall, a fruity and creamy wheat-forward beer with some yeast spice a light funk and tartness. Not bad.

Pours a cloudy, golden amber color with a thin ivory head that disappears quickly.
Smell is a little hoppy and quite sweet, with a strong scent of tart yeast. Some herbal scents as it warms up.
Taste is far from what one might expect from a sour; a little tart, but with a strong herbal backbone. A little bitter, but not overwhelming.
Goes down smooth with just enough carbonation to avoid being flat. Not thick, but not too watery.
Overall a very tasty, if not a little safe. Never gets too tart, and doesn’t really push the envelope. But tasty nonetheless.

Bomber. Pours a hazy cantaloupe hue with a collapsing white head. Aroma is initially doughy, then turns barnyard funky, fruity (persimmons? not sure what they smell like)--smells pretty exotic. Taste is lightly sweet before turning savory and lightly tart. The brett imparts dusty old books; I’m also getting a bit of banana custard. Carbonation is fairly soft, body is slick. Very interesting and quite tasty.

Draft at sb. Pours a cloudy pale amber with very little head and just spotty lace. Mild pulpy tree fruit nose; i wouldn’t know a persimmon if it stood up in my soup but that must be what’s in the aromatics here. Creamy medium body with lively carb. Nice tangy fresh fruit juice quality. Good showcase for the featured ingredient. Cantwell’s deft touch with adjuncts strikes again.

Lightly funky and acidic a touch of bread and wheat notes, a touch earthy. Not much in aroma really, very subdued. Pours hazy golden orange, thin white head. Flavors are lightly acidic tartness up front, bread, dough, wheat in the mid palate, light funkiness in the finish. A touch acidicly fruity but thats about it. Bright carbonation. Not unpleasant.

taste is sour, oily, malt, and a little sweetness in the back.
