COMMERCIAL DESCRIPTION
Mortis will enwrap you in autumn coils of tartness and decay, with ripe Fuyu persimmons bringing the slightest blush to a pale ale fermented entirely with brettanomyces bruxellensis. German and Northwest wheat, pale and acidulated barley malt and a touch of C-45 Crystal combine with Fuggles hops to wrap things up dry, tight and tart, refreshing and satisfying. Mortis has set in just in time for Thanksgiving.

Draught at Elizabeth Station, Bellingham, WA, listed at 6% ABV
Cloudy amber color, small creamy head. The aroma is mild, a bit fruity, sour, earthy (soil). Smooth mouthfeel, some malt flavor, the sourness is just hinted, very light Bretts, and a delicate fruitiness and sweetness, probably from the persimmon. Low bitterness.
Pleasant and easy for many palates.

Bomber from Lets Pour. Pours clear orange gold with a fizzy transient white head. Aroma is faint sour fruit. Med body. Flavor is bready, with a slight earthiness suggesting brett, and some sort of fruit. Obviously persimmon, but I wouldn’t know that on my own. It’s tart/sour, but not strongly so. Finishes that way.

Tap at Max’s Taphouse. Pours clear dark gold with a small, fizzy white head, short retention with spare lacing. Aroma is persimmon and biscuit malt, spicy alcohol and fruity esters. Flavor is malt forward with persimmon, light hops and bitterness with spicy alcohol, and a dry finish. Medium body and carbonation.

Lightly funky and acidic a touch of bread and wheat notes, a touch earthy. Not much in aroma really, very subdued. Pours hazy golden orange, thin white head. Flavors are lightly acidic tartness up front, bread, dough, wheat in the mid palate, light funkiness in the finish. A touch acidicly fruity but thats about it. Bright carbonation. Not unpleasant.

Draft at sb. Pours a cloudy pale amber with very little head and just spotty lace. Mild pulpy tree fruit nose; i wouldn’t know a persimmon if it stood up in my soup but that must be what’s in the aromatics here. Creamy medium body with lively carb. Nice tangy fresh fruit juice quality. Good showcase for the featured ingredient. Cantwell’s deft touch with adjuncts strikes again.
