Commercial Description:
A smooth and sturdy stout, made with 10% rolled oats, roasted barley and chocolate malt. The name is referential to the founders of Thebes, warriors who sprang from the earth when the teeth of a slain dragon were sown by Cadmus. Bittered with Chinook; finished with Cascade and Columbus hops.

Bottle. Pours near black with a fizzy tan head. Roasted malt aroma, with chocolate, caramel and floral hops. The flavor is more coffee than chocolate and has the same floral hop profile from the aroma. Some sweeter caramel as well. The finish is long and hoppy.

The aroma is fantastic: coffee, malt, and roasted sugars pour up your nose. The beer itself is strong and sweet, almost cloying in it’s potency. A good pour, although you must have a sweet tooth to fully appreciate this one.

Rerate at Elysian in Seattle, I forget which one it was called. Did not disagree on the flavor components, just liked it a bit less...3.7 to 3.6. Color of dark brownblack; light brown head. Aroma of chocolate, roasted malt, caramel and yeast. Flavor reminded me a bit of a Baltic Porter; chocolate, coffee, meat and roasted malt.

Bomber from SuzyGreenberg. Pours very dark with a decent-sized tan head, with some lacing. Aroma is malt, coffee, licorice, chocolate, vanilla. Taste is chocolate, coffee, malt, vanilla, licorice, and some bitterness in the finish. Palate is a little light and coating. Overall, a nice stout with a little more bitterness than is typical with this type of stout.

[ Trade with Maria ]. Clear dark black color with a average, frothy, good lacing, mostly lasting, beige head. Aroma is moderate malty, roasted, chocolate, coffee, peat. Flavor is moderate sweet and moderate to heavy malt bitter with a long to average duration. Body is medium to ’medium t full’, texture is oily - creamy and smooth, carbonation is soft. (230608)

a nice dark black brew with a medium chocolate ice cream colored head. a wash in the first taste of chocolate roasted with a hint of sugar and anise and coffee with a nice muted hoppy finish in a tang that is really not chalky but bitter and lasts for an appreciable length of time. upon the second taste a acrid hint of acid and smoke and a winery taste of grape and perhaps cherry. the head soon loses its stiffness in the foamy lightish palate that is slightly slick. flavors leave as the brew sits and in the end of the bomber we had a good malty brew a bit winey with an aroma that i swear was of fresh sweet cream!

Pours fairly viscous for a stout that isn’t an imperial, with a nearly black body, and a compact, dark tan head - the carbonation is a little fizzy, so it does look a little like soda, though - rich aroma of licorice, roasted malt, cocoa, vanilla, caramelized sugars - the flavor and body aren’t as rich as the aroma suggests, but its still very tasty - a lot of dry, bitter, dark roast coffee character up front, followed by sweeter notes of vanilla and chocolate, plus a bit of black cherry on the back end - a bit of black licorice/anise comes in near the end as well - lingering bitter chocolate - quite a nice beer.
