A smooth and sturdy stout, made with 10% rolled oats, roasted barley and chocolate malt. The name is referential to the founders of Thebes, warriors who sprang from the earth when the teeth of a slain dragon were sown by Cadmus. Bittered with Chinook; finished with Cascade and Columbus hops.

Really dark in the glass with milk chocolate aromas. Very clean flavors, yes it’s smooth, and bright hops that somehow don’t un-balance the beer. The oats really carry some heft. Good stuff.

Pours pretty much black, thin cappuccino colored head. Lots of char, smoke, leather and roasted fruit on the nose, plum, maybe raisin. This leads to a classic imperial stout taste...wood, burned oak, dark sweetness, roasted nuts, a dash of pepper in the finish. Nice full mouthfeel, creamy with a bite, well masked abv. Good beer.

8.1%ABV. Imperial stout. Poured out black. 40°SRM. Nose has coffee, black cherries, smoke, coffee, and liniment. Mouthfeel is juicy and watery. Palate has some nice charcoal, smoke and some nice plum preserve roundness. There is some spicy woodsmoke. Floral and light incense. Perfume-like. Some sandalwood in the palate and wormwood in the finish. Still get some nice sweet cherry in the finish. Finish is ume and dry and woody. Overall a very well-provisioned stout with good smoke, dark roasted malt and perfume-like character. Finishes off with some nice fruity character on the palate. Goes on Favorites List !

On tap at Westin Seattle’s restaurant. A black ale with a resilient beige head. Aroma is coffee, chocolate, hazelnut, molasses. Flavor is dark chocolate, burnt caramel, molasses and hazelnut. Finish is coffee, dark chocolate ; nice bitterness. Lingering. Full body, velvety and oily mouthfeel, weak to average carbonation.

22 ounce bottle at 8.1%abv. Pours near black with a two inch dark tan head that lasts. Taste is of roasted malt, chocolate, some smoke, caramel, wood and some hops. Has a full body with a slight bitter finish. Quite excellent.

Bottle sample at a tasting at Max’s place. Thanks kerenmk. Black with a tan head. Aroma of roast, coffee, a bit of dark fruits. Flavor starts sweetish with roast, dark chocolate, some coffee, finishes bitter. Medium to full-bodied. Good but not great.

Pours a dark black from tap. with toasted malts and bitter chocolates in the aroma. Nice thick lasting tan head. Taste is bitter chocolate and roast malt. Palate is smooth and creamy . Lingers long on the tongue with a bit of bitterness and sweet chocolate notes that linger a long time.

Draught at Keyaki. Dark chocolate, orange, definitely some soy sauce, the hops seem to give it a kind of black ipa edge, ok finish with light boozy notes. Decent dark brew but feels quite overhyped to me, not exactly an exciting import.

Tap at Keyaki. Nose of cocoa, coffee, soy sauce. Black and a bit flat. Flavor is decent, cocoa, soy sauce. Nice but not that special.
