Commercial Description:
A smooth and sturdy stout, made with 10% rolled oats, roasted barley and chocolate malt. The name is referential to the founders of Thebes, warriors who sprang from the earth when the teeth of a slain dragon were sown by Cadmus. Bittered with Chinook; finished with Cascade and Columbus hops.

Pours opaque black with a good brown head. Aroma is mostly of coffee/roasted malt, with a hint of the alcohol. Feel is good and hearty, as you want in a stout. The taste is very good and complex, certainly one of my favorite beers. Not blow-you-away amazing like the Stone Imperial or the Dogfish Head WW; however, at "only" 7.45% alcohol, I can actually drink an entire bomber without feeling trashed. One thing I’ve noticed at least with the draft version: the quality varies. Sometimes it has been excellent and other times disappointing. That could explain some of the varience in the ratings here.

750. Beer is opaque dark brown, head is average-sized, tan, frothy, diminishing but lasting. Dots of specky lace on snifter.
The aroma is nice. First impression is roasty-creamy with an earthy appeal. Malty with moderate notes of roasted grain, creamy milk chocolate, coffee, light note of peaty molasses; Hoppy with light-to-moderate notes of resin/pine; Yeasty with a light note of creamy dough, light note of basement; Light miscellaneous notes of sweet black cherry, light note of distant fireplace smoke, trace of rainy garden soil.
The flavor is moderately sweet, light-to-moderately bitter with a long, , lightly bitter, light-to-moderately sweet finish. Hint of astringency.
The body is medium-to-full, the texture is velvety and the carbonation is lively.

Wow! Poured a thick black-brown opaque body with a thin grey-brown head. Nose of chocolate malts and rich, grainy bitter hops. Thick rich vanilla mouth feel. Lush and well balanced. This beer is awesome!

Bottle thanks to SuzyGreenberg. Pour is black with a medium brown head. Aroma has tons of roasted malt and milk chocolate with a touch of smoke and tobacco. This smells rich and velvety. Flavor starts with lots of roasted malt and chocolate followed by a light dark fruit flavor. This has quite a bit of carbonation in it which really serves to smooth it out and make it a pretty easy drink. I enjoyed this beer with some chicken that I braised in a honey-mustard Expedition stout sauce. It was an awesome sauce and this beer was a really nice complement.

Bottle. Dark, milk chocolate head. Coffee, charcoal, liquorice. Full mouth feel, dry forest fire finish. Lovely for sipping, would probably be nice with smoked meat. This could certainly warrant a broader distribution.

Dark brown in color, beautiful creamy head. Strong aromas of chocolate, coffee and slight hops aroma. Taste is outstanding. Full mouthfeel, near chewy consistancy. Big coffee, roasted dark fruit chocolate taste with a slight dry and moderately bitter finish. Perfect snowy night beverage and higly drinkable. Flavor realy blossoms as the termperature rises.

Bottle. [thank you after4ever]
Pours an oily dark mahogany with a small brown head that quickly diminishes into a thin film. Aroma has loads of chocolate, but with other tones apparent as well. A little mint, some vanilla, slight coffee, yeast. The flavour begins with a malty chocolate sweetness, then a more powerful dose of coffee and spices (and yeast) comes through. Long, lingering chocolate aftertaste. Great brew! Thank you for this surprise, Tom!!

Pours inky black with a few bubbles on top. No head at first, but then this thin tan velvety layer of head appears. Looks very sophisticated. Aroma is roasted malt with a little espresso. Flavor is espresso, chocolate, and roasted malt. Full body, silky mouthfeel make this an absolute pleasure to drink. Yum.
