Bottled. Hazy reddish amber colour with a small beige head that leaves some lace. Aroma is sweet malts, mild alcohol, caramel, toffee and some mild dry fruits as well as ripe fruitiness to it. Also some nuttiness. Flavour is very similar, with also some mild grainy notes. Good sipper, and actually not too sweet, even though it’s got quite a high abv.

33cl bb11/2014. Gist of it: Delicately engineered, ultimately overamped, yet lean German-style Doppelbock with an uneasy conscience of the power and potential of top-fermenting dark ales down South. Nose: dark portwine fruits, stewed maroni, bessenjenever. Taste: more bessenjenever on purified caramel malts amped to eleven, prune jam. Distinct hop fruity bitterness, lingering stone fruit peel and tree bark malt astringency in the finish. Surprisingly lean, medium mouthfeel, Alcohol burn, invisible yeast profile (100% bottom fermented?). Well executed triple winter warmer, straight to the toes after a long walk. The Spinal Tap rendition of their impressively demure Herstbok.

Dark brown with a hazy texture if you look really closely. Tan head. A bit of chocolate and a bit more coffee and smoke.

Bottle 33cl. Dark red brown colour with a beige head that fades quickly. Aroma has yeast, coffee and chocolate. The taste is lovely. The beer feels thick and welcomes you with a soft, sweetness. Chocolate and coffee at first and then the typical emelisse bitterness kicks in. Later there’s warmness from the alcohol. Very good stuff, bring on the winter!

In short: A monstrously sweet orgy of caramel-coated candied dark fruits in a sumptuous body. Not for me.
How: Bottle 330ml, consumed with some age on it, probably over one year of age.
The look: Cloudy dark burgundy body topped by a medium tan head.
In long: Nose is rich as expected, candied fruits and caramel and all… it’s a big doppelbock, no doubt. Body fuller-than-full but with plenty of soft bubbles that create a surprisingly pleasant sumptuous mouthfeel. Taste is an orgy of caramelized dried dark fruits, no use naming the dark fruit flavors I picked up here, with every sip I picked up a few different ones. Also noted maple syrup or maybe it was some kind of not-so-bitter resinous wooden hops finish that tasted like tree sap. Alcohol is apparent but not bothersome. This truly is a digestive beer. Too sweet for me, that was to be expected from a 11% Doppelbock. Not sure why I bought this, a style I don’t really like from a brewery I don’t really like, a winning combination that has as much chances at paying off as playing 6-39-26-B-Chicken-& at the loto.

Bottle from Voldby. Pours dark amber with a tan head. Malty taste of caramel, syrup, some fruits, alcohol. Full body. Creamy texture. Soft carbonation. Nice warming finish. Excellent.

Bottle, 20/04/14. Pours a wooden dark brown, almost black. Small, beige head. Aroma is salty liquorice, roast, smoke, light smoked ham, some liquorice. Smokiness is a bit of a surprise. Taste is semisweet, a lot of salty liquorice, salty liquorice candy. There’s roast and some smoke as well. Smoked liquorice is a good description. Some dark fruits. Really strong and rich taste. Full with good, medium carbonation. Really chewy and moreish, rich and full.

The kind of beer that makes you wish it was winter all year round. Beautiful, rich colour and palate. No head at all which is a shame but that’s the only negative point I can find. Rich, xmas pudding aroma and plenty of sweetness (leaves you licking your lips). A greedy beer for greedy drinkers. Won’t quench your thirst but who cares. Yummy !

bottle, xmas chez baerwaldt 2012. rich shade of amber with a minimal head; loads of caramel in the aroma, some vanilla syrup; sticky and sweet, toffeed, hint of prunes, manages to remain quite drinkable in spite of the high alcohol
