A quadruppel style brewed beer. Brewed with pils, munchener, abbey malt and Candi suger. White Labs WLP 007 yeast.Brewed every year.The 2011 brew is a Sorachi Ace Single hop brew. The 2014 version: 9,2%, 22,3 % P, EBU 51, marshmallows added

Spéciale d’hiver 2014 (j’insiste sur le millésime) au marshmallow qui est bien plus un barley wine qu’une quadruple comme indiqué sur le site. Niveau abv de 9,2 %, pour 22,3° plato, avec 51 ebu. Très jolie étiquette deep purple... Couleur de la bière, elle, en belle rousse un rien auburn/cuivré, qui aurait plu à ma grand-mère, si elle l’avait connue, évidemment... Clarté nette. Bulles moyennes partout, vives. Nappage beige soyeux de surface (ce qui permet déjà une nette différence barley wine et quad …). Arômes d’acajou, prune d’Ente sur l’arbre, miel de lavande, pointe de framboise délicate. 1ère bouche souple à la très belle entame malt/épice, avec un côté boisé exotique. Arrière-bouche matée, un rien caramélisée, mais pas du tout mièvre. 2ème à l’ensemble vraiment intéressant malt/résine. Arrière-bouche de malt extrêmement fin. 3ème sublime bouche qui se développe, prend de l’ampleur. Arrière-bouche de vrai barley wine dans le plus pur sens. Longueur au grand développement sur le fût, lie de vin magnifique, avec de superbes envolées. Jambes huileuses, comme il convient au genre. Levure soyeuse, délicate, parfumée, superbe ligne. Finale qui est un dieu (je ne puis vous dire lequel) descendu sur terre, pardon, dans mon verre. CONCLUSION : sauf décision par le brasseur, on ne retrouvera plus cette bière, puisqu’on est passé en 2015 à l’engelse drop en addition à la bière, au lieu du marshmallow .. Alors je lance un appel solennel au brasseur par l’intermédiaire de Ste Emelisse : « ôôôh, Ste Emelisse, faites que nous retrouvions la bière WINTER 2014 tellement sublime dans nos verres qui en sont orphelins... Excusez-moi d’être aussi précis, Ste Emelisse, mais je sais que vous avez des livres de demande bien tenus, et je suis sûr que vous m’exaucerez … Amen ». En principe, quand j’étais petit, ça marchait ...

Murky brownish dark copper with no head, even when poured with a bit of vigour. Plum and raisin and dark belgian chewy malts on the nose, a bit of cinnamon-raisin bagel, and sugary plum. Rich, sumptuous flavor with plum, raisin, date, a touch of dark cherry, loads of sugary bready tones, some dark belgian malts and dark belgian candy sugar; quite fruity and full, with just a sublime booze heat on the stone fruity sweet finish. Christmas Eve in a glass.

I’m not sure why this is rated as so low. I think it’s fantastic. It expires 12/2014 so it could be two years old. Will have to check on that. Deep mahogany orangey brown with a frothy lacy, off-white head that settles to a thin ring. Smells of a sweet liquorice, and heavy malt, caramel and sugar with soft roast, soft spice and raisin. Medium to full smooth oily palate. Natural sweetness or raisin and liquorish and malt and finishes with a soft bitter slightly roast dry finish with just a hint of sourness. Excellent balance and warms my tummy. No taste of alcohol.

Winterbier 2014. Kolor bordowy, idealnie klarowne. Piana niska, ale bardzo kremowa, mocno oblepia szklo. W aromacie duzo slodu, melasy, pianek, karmelu, ciemnych owocow, syropu kandyzowanego, miety, przypraw, migdalow, bardzo intensywny i bardzo slodki aromat. W odczuciu pelne, oleiste, wysoko wysycone. W smaku sporo slodyczy, karmelu, orzechow wloskich, przypraw, troche chleba, jest tez sporo alkoholu, ktory balansuje slodycz pianek. Goryczka niska, ziemista i mietowa.

UPDATED: MAY 18, 2010 this Winterbier had a strong aura and rich, comforting texture. You can feel the booze getting you blitized and being your friend :
Caramel , stickiness, spicy bittering hops..esters ,oranges . Luv this kinda Belgian(style ale) m cause its not even trying to wow and does in a mellow, rich ,eazy buzz.

11.16 bottle. Murky, opaque burgundy-red. Smooth on the palate, classic quality Danish feel. Malt and yeast forward, with some raisiny chocolate tones. Really balanced, quite a well executed beer. I can deal with this one being caled a Quad, as it really does capture all those big malty, fruity flavors..but also retains a really creamy, smooth body. Great beer!

Bruna-mogano con una discreta schiuma mediamente persistente. Aroma di frutti di bosco poi piano piano emergono anche altri sentori facendosi via via più complessa. Naso che tuttavia rimane incentrato sui caratteri dolci della frutta di bosco e zucchero di canna con una leggera influenza di luppolo. Al palato ingresso dolce, fruttato, caramellato, alcolico con un sottofondo amaro di liquirizia che sembra quasi "tracimare" nel cioccolatoso. Il tutto è miscelato molto bene, e dona alla birra un buon carattere e corpo. Ottima e complessa ma mai difficile da bere. Ottima. Ultima cosa: sembra più una Belgian Strong Ale che una Quadrupel.

Draft @ PWBF’11: Light brown to yellow-ish lacing. Dark amber brown colored beer. A very soft smell of mostly butter and with hints of toffee, wine-ish, caramel and malts. Taste is also very soft, a mix of spices, liquorice, dark fruits, hint of prunes, light bitter and sweet and some hops. Soft mouthfeel, mid body and low carbo.
